Grilled Corn Salad

I made this salad for a party. I was rushed so I used frozen corn kernels and I added diced avocado. It was awesome!! Great recipe!

Delicious Raspberry Oatmeal Cookie Bars

I had fresh raspberries that were on their last leg so made this dish exactly as described, except I used about 1/3 cup raspberry jam and about 2/3 cup mashed fresh raspberries. They are amazing!! It was the perfect use for the berries and the flavour is awesome! Thanks for the tip from another review to rub the butter in well, the bars aren't crumbly at all. I don't have a strong sweet tooth so I love the tartness of the fresh berry flavour.

Too Much Chocolate Cake

This is such a great recipe. Thanks to another review, I've tried this with vanilla cake and white chocolate pudding mix, as well as other flavours. The vanilla and white chocolate pudding is awesome, I just learned not to use white chocolate chips. I've now made this at least a dozen times for birthday cakes in various shaped bundt pans. I've done several versions of this with the white mix, white pudding and divvied the dough into multiple bowls, tinted each one a bright colour with paste food colouring, then spooned the batter into the pan to make rainbow cakes. This makes an awesome cake for any shaped pan.

Chocolate Muffins

This is the BEST cupcake or chocolate muffin recipe!! I have bug-shaped muffin pans and this bakes so perfectly in them that all their definition is really clear. This is a huge hit whenever I make it for my Brownie unit. Thanks for sharing!

Favorite Old Fashioned Gingerbread

I've made this several times and its always amazing. What a wonderful recipe! I took the advice of another review and add 1/2 cup of applesauce. Then I just dust the cake with powdered sugar and serve with cream. WONDERFUL recipe.

Morning Glory Muffins

Awesome muffins. Substituted fresh pineapple for canned and used golden raisins. Used 1 cup whole wheat flour in place of some of the white. They were perfect.

Pumpkin Chocolate Chip Muffins

What great muffins! I made these for my Brownie troop and the girls LOVED them. I followed the advice of other reviews and lowered the oven temp to 350', & increased the amount of pumpkin and substituted brown sugar for the white. I substituted some whole wheat flour in an attempt to make it healthier. This was a very popular treat and yet was totally new compared to our usual snacks. I'll definitely be making this again...and again...and again!

Vegan Brownies

I've baked these several times for bake sales and they are wildly popular whether people are looking for a vegan item or not. I preferred using shortening since the coconut oil I used once was a pain. I added 1/2 cup applesauce and they were moist, dense and truly chocolate. I've reduced the oil in some batches and never noticed.

Overnight Caramel Pecan Rolls

Awesome recipe. These were the simplest and most wonderful breakfast rolls I have ever made. Reminded me of rolls I used to get from a bakery I haven't even thought of for 20 years. We just had these for Christmas breakfast and they will be a tradition. Only changes I made was to add min-chocolate chipes to some of them and omited the pecans for some for the kids. I also accidentally combined the butter, sugar and cinnamon so just spread that on, and it was great.

Fluffy French Toast

This was the BEST French toast I've ever made! My only comment is that I saturated the bread (ordinary white bread) just like the recipe said and only got six slices of toast. That was fine since we have a small family but I don't know how this could've made 12 slices of thick bread. I also added 1/4 t nutmeg just because I love it.

Oatmeal Toffee Cookies

These are wonderful! I couldn't find chocolate covered toffee bits so I used 3/4 cup min chocoalte chips, 1 1/2 cups toffee bits and 3/4 cups toasted pecan pieces. They are heavenly if you love toffee! I found the oats cooked the best at 325' for 15 minutes, otherewise they tasted chewy. I will probably toast my oats first next time. Also, I mixed all the dry ingredients together (including nuts, chips and toffee) and mixed it all in at once and it was fine.

Skillet Strawberry Pancake

Red Velvet Cupcakes

These were great! I just made 5 dozen for school Valentine's parties and then 18 8" cakes for my Sparks (like Brownies) unit to decorate. I tried several suggestions and liked the substituions suggested by the Baby Bow Lady. The flavour and texture is great. I also used paste food colouring and just added both pink and red. They are gorgeous.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

These were very flavourful and moist! My only disappointment was the appearance, the tops flattened and sunk as they cooled. My only substitution was that I used pureed fresh strawberries in lieu of the frozen ones. Next time I will try slicing them instead of pureeing. I also reduced the amount of cinnamon just based on the reviews I read.
