Mom's Chicken Pot Pie

I used it mainly for the cooking time. I used fresh onions, mushrooms, carrots, broccoli and chicken. I precooked these ingredients. I made a sauce with chicken stock thickened with seasoned flour. It had sage and salt. After it thickened I used a bit of milk. I used less sauce than this recipe but it was just right for us. I used Pie Crust III and added some salt to the dough. it was a flaky crust that was a perfect for this pie.

Pie Crust III

Flaky. Definitely add salt. Sugar if for a dessert. Used it for a chicken pot pie, added salt to the dough, and it was a hit. It is a bit hard to roll. Definitely chill before rolling out. It is oily but it crisps nicely in the oven. I would use this again.

Chocolate Cornstarch Pudding

Easy. I added extra chocolate to suit taste. Also, when adding the vanilla, I added a bit of dried espresso to deepen the chocolate flavor. Husband felt loved eating warm homemade pudding for dessert.

Pesto

Made 1/2 recipe following proportions. Great flavor. Simple to make. Added a dash of salt as others suggested. Used cilantro instead of parsley. Will make again. Now it has me thinking of growing basil this summer. I didn't last year but it would be handy to have frozen pesto made from the garden's bounty.

Healthier Banana Banana Bread

Delicious! Added fresh grated nutmeg (love the smell) and cinnamon to taste. Also a cup of toasted walnuts. Will make again. Splendid. Nice chewy texture, not dry and right amount of banana flavor. Also, for more nutrition I substituted one cup of quality whole wheat flour for white. To make mashing bananas easier, I use a potato masher. Also, I use a micro grater and buy whole nutmegs. They are easy to grate and it is such a difference in flavor and nutrition.

Cauliflower Soup

I think it is tasty with homemade chicken stock. As with any basic soup recipe you are free to add what suits your mood, taste and adjust with what you have on hand. Glad this recipe offers a great way to eat cauliflower. I did use an immersion blender and cooked the chopped cauliflower in the hot soup base.

Glazed Lemon Bread

Easy bread recipe, especially if you only have lemons and want to make a treat. I did use powdered sugar for the glaze and avoided the issues with the grainy texture other reviewers mentioned.

Speedy Homemade Salsa

This salsa recipe has become a staple in our house. I tend to use more cilantro than the recipe calls for and depending on what I have on hand I will add different peppers and onions. A great basic recipe that my husband always comments tastes so fresh. I end up making about once a week.

Tom Ka Gai (Coconut Chicken Soup)

This was easy to prepare with ingredients on hand. I did use the trick another reviewer mentioned to add some sugar with the fish sauce. I will try to add lemon grass next time but I usually don't have on hand.

Chicken Stock

This is soooo good. I have used the leftover roasted chicken from the store with great success. It usually has some chicken on the bone and I cover in water. Note, if you do this you will not have 4 pounds of chicken but I have found it still makes a flavorful stock.

Fresh Herbed Halibut

Delicious! As with other reviewers, I didn't see the point of slathering cheese, cream etc on a choice cut of fish. The halibut was 2.5 lb and cooked it at 400 for just over twenty minutes.

Hamburger Buns

Made with Fuji apples. It is great with both kinds of nuts and not the oatmeal. It is funny to read comments asking about where is the oatmeal. If you want it, put it in, but why would you?

Fried Pork Chop

The pork chops I had were thicker than 3/4" so once I fried on each side about 5 minutes each, I placed in 400 degree oven for about 15-20 minutes. Delicious!

Delilah's Frosted Cut-Out Sugar Cookies

The cookies were not too sweet, soft and and crispy on outside. I did adjust the time to bake to my oven. The frosting creates a soft shiny glaze that makes them stackable and is delicious. I used white whole wheat flour and the kids didn't notice. May try adding flavoring like some of the reviewers suggested next time.

Chinese Chicken Soup

Used this recipe as a base to determine ratio for seasonings. Delicious! My step-daughter, age 14, complimented it several times, and of course, had seconds. Thanks. Added finely chopped red pepper, sliced mushrooms, water chestnuts and sliced carrots.

Roasted Cauliflower Soup
