Coconut Rice

I adjusted the liquids ratio and cooking time to use brown rice, subbed chicken stock for water, added some garlic and sauteed my onion, garlic and ginger in a bit of oil before adding the liquids and rice. I also toasted some coconut and chopped cashews that I mixed into the rice right before serving. I topped each serving with chopped cilantro. With my modifications this recipe gets five stars, I'll make it often, my husband ate three helpings of it and all three of my 2 year olds enjoyed it.

Allspice String Beans

I scaled the allspice down by half, with the addition of some thyme and brown sugar this recipe gets five stars from me! :)

Nutty Coconut Fish

I used cornflakes in place of the bread crumbs and as I used sweetened flaked coconut I omitted the sugar, I also dredged my fish in flour before I dipped it in the mayonaisse mixture. Everyone loved it.

Ash-e-jow (Iranian/Persian Barley Soup)

What a great soup! I used more tomato paste than the recipe called for and added the zest from my lime in with the juice. I subbed fat free plain yogurt for the sour cream. Wonderful!

These are wonderful, I did make a few minor alterations to the recipe, I subbed 1/2 cup of the oil with plain fat free yogurt and reduced the white sugar by 1/2 cup and tossed in a few chocolate chunks.
