This is one of the best coffee cakes I've ever made. It was fairly simple and turned out amazing. Be warned the smell of this baking will drive you crazy!

Pumpkin Pecan "Brownies"

Reviewed: Oct. 4, 2011
I've been meaning to make these since I stumbled across them last year and I have to say that the exceeded my expectations. These are fantastic bars! Rich and moist like a good brownie with excellent flavour. I didn't use pumpkin pie spice, just added cinnamon, nutmeg, allspice, cloves and ginger to my tastes as I do with all pumpkin desserts and followed the recipe exactly otherwise. These are a keeper, thanks Pam.

Savory Stuffed Zucchini

Reviewed: Aug. 1, 2011
This was very good, I used a little less walnuts than called for as I only had about 2/3 of a cup on hand and I used more garlic than called for. The only issue with this was that it was a little wattery and took longer to cook than stated.

Mango Blueberry Muffins With Coconut Streusel

Reviewed: Jun. 17, 2011
The only change I made was to use plain yogurt thinned with a little milk in place of the butter milk and these are spectactular! Some of the best I've ever tasted. Thanks Geranium :).

Orange Raisin Cake

Reviewed: Jun. 17, 2011
I made this for the photo contest and was amazed by how good it was. The cinnamon sugar topping made the cake. It was great warm or cold and will be perfect around the holidays.

Tarragon Tuna Salad

Reviewed: Jun. 10, 2011
This is by far the best tuna salad I've ever tasted. It's so fresh tasting! It's quickly becoming a summer staple around here because I have all of those lovely fresh herbs in the garden.

Banana Cream Dessert

Reviewed: May 12, 2011
This didn't set very well and I made it the day before. It ended up being very messy at serving time but the flavor was good. Next time I will freeze it before taking the sides off of the pan. I used chocolate wafer crumbs for the crust and topped it with chocolate crumbs instead of nuts due to an allergy.

Spicy Pork Chops with Herbed Roasted New Potatoes

Reviewed: May 6, 2011
I used red potatoes cut into pieces and dried herbs for this and it turned out beautifully. I can't wait for garden potatoes and herbs to be ready so I can try this as written! Thanks for a great recipe Don.

Barley Lime Fiesta Salad

Reviewed: May 3, 2011
I left out the celery due to personal tastes, subbed honey for the corn syrup and used chipotle powder instead of canned chipotles. This salad is delicious, filling, and tastes even better the next day.

Sweet Party Mix

Reviewed: Apr. 7, 2011
Simple and delicious. I doubled this recipe, added pretzels to the mixture and m&ms after this was baked and fed it to a group of 60 kids at a youth center. It was enjoyed by all.

This recipe is spot on, I used my Kitchen Aid to knead the dough and it was the most beautiful soft chapati I've ever eaten.

Orange Coconut Salmon

Reviewed: Mar. 28, 2011
This was very easy to throw together and I loved it. I did dredge my salmon in flour before dipping it in the egg and instead of serving the dipping sauce on the side I spooned it over the salmon and used leftovers on my rice. YUM.

Apple Crisp Cups

Reviewed: Mar. 25, 2011
I had some sticking with these and they were a little fussy to make but had great flavor. I will grease my tins lightly next time. They are dangerous little bites, you can eat 6 or 8 of them without realizing how much you've just eaten ;).

I'm not sure I remember making this all of the way through, my memory of it is fuzzy for some reason, so I'm not sure if I followed the recipe exactly. However, the end result was spectacular!

Sweet and Nutty Moroccan Couscous

Reviewed: Mar. 17, 2011
I really like the idea of this but for my taste buds the amounts are a little off, I use more dried fruit and almonds and add nutmeg, cardamom and a few pinches of cloves.

Cardamom Chicken with Salt and Pepper Crust

Reviewed: Mar. 17, 2011
This chicken came out so delicious! The salt and pepper crust make this dish and the cardamom is quite subtle. I whirled together the marinade ingredients in my mini chopped and ended up letting the chicken sit in it for about 8 hours.

Nice and easy recipe. My husband is not a big fan of carrots but he liked this. I used more cinnamon than called for and added a pinch or two of nutmeg.

Peanut Clusters II

Reviewed: Mar. 17, 2011
These are so easy and very tasty. The rice crispies become spongy though, next time I make them I will use more peanuts and less rice crispies to make them a little more crunchy. I highly recommend using salted roasted peanuts, the salty sweet combo is fantastic.
