Debdoozie's Blue Ribbon Chili

Simple and tasty! I love the use of salsa (you can pick a really good gourmet salsa if you like to experiment) and it adds great flavour. I usually make it with a can of dark red kidney beans and a can of baked beans. I have also been known to add a few carrots and a bit of spinach (pureed of course) to it so my kids would get their veggies in - the chili hides these wonderfully. I top it with grated cheese and a spoon of sour cream. The kids love it and my hubby adds his hot sauce and it still tastes great. Well done Debdoozie!!

Sweet Potato and Apple Soup

I agree with the others - omit the lemon - it really does overpower the soup. I used the feta cheese and also omitted the salt as I thought the feta would add enough of its own salt. I couldn't taste the apples and that was fine with me. I used unsweetened almond milk instead of cream to lower the calories. I will make this again and maybe try to hide some greens in here to get more veggies into the kids.

Tequila Cocktail Sauce

So good and so easy!!! I use the same ingredients and make it for a smaller crowd but it turns out all the time. I wouldn't change it at all.

Cranberry Pistachio Biscotti

Really yummy - everyone loved them. I found that they cracked if I left them to cool for too long the warmer they are when you cut them the less they will crack. I also used a sharp bread knife to do a single slice/chop through the dough. The second time after the 10 minutes of baking, I turned off the oven and let them dry inside. This gave them the perfect hardness. I added white chocolate drizzle to top them. These went as teachers holiday gifts for the second year in a row and I got nothing but rave reviews and the kids were happy.
