Smoked Gouda Mac and Cheese

yummy. i used lots of smoked gouda, about 1/2 lb. i also used a pasta that was sort of half shell, half elbow which worked well.

Butternut Squash Soup with a Kick

Spinach Cheese Manicotti

i make a dish like this often. i use fresh spinach and chop it, and use real garlic. HINT: to stuff the shells easily, spoon the filling into a plastic storage bag, cut of a little bit of one corner, and pipe it into the tube. will save you alot of time. i also cook the noodles for a few minutes to save on baking time.

Salmon Wellington

this was very yummy! i wrapped the fish in a paper towel for about 30 minutes or so first to remove excess liquid. i used much less mayo mixture than the recipe called for...about 1/2 cup for 1.25 lbs fish. it turned out great, not soggy at all. next time i will use fresh chopped spinach though, easier to deal with and tastes better.

The Best Vegetarian Chili in the World

very good! i used orange bell instead of green and added some extra cumin and chili power to my taste. i'm not sure why some people think it's so spicy, but i am guessing that they chopped the jalapenos whole with the seeds and all. they need to be sliced down the middle, and the seeds scooped out. without the seeds, not too spicy at all.

very good, very spicy. i added about 1/2 teaspoon or so of dark brown sugar. still quite hot but kills the burn a little.

Cranberry Pecan Salad

very delicious salad. i served it on fresh spinach, and have made it for several parties and everyone loves it. i use a little less oil and a little more dijon in the dressing. watch the pecans carefully- mine only need 5 minutes in the over or they burn. soooo yummmy!
