Mom's Buttermilk Pancakes

I've never been a huge pancake fan, and in the past, I always just used milk instead of buttermilk, but we had leftover buttermilk in so I tried these this morning - great, light, fluffy pancakes - these are delicious!

Baked Buffalo Wings

We really wanted wings but didn't have any oil, so we decided to try these. They took a lot more than 45 minutes to get really done and crispy, about an hour and a half, but once done, these are great. We really like trashed wings, so when the wings were done and crispy, we dipped them in sauce and baked the sauce on for another 5 minutes or so. We'll never fry again!

Delicious Ham and Potato Soup

The best potato soup we ever ate, hands down! We like our food a little spicy, so we used a whole medium onion and added a 1/4 tsp red pepper flakes. Other than that, we cooked this exactly as stated. For two people, barely enough for lunch tomorrow and can't wait to make again. YUM!

Roasted Rack of Lamb

This recipe is so flavorful and delicious. We skipped the searing on the stove, seasoned with a little salt and pepper, spread the mustard and a little olive oil on the meat, then put the breadcrumb mixture on and roasted the rack at 425 degrees until medium rare, about 35 minutes. Absolutely wonderful!
