Layered Mint Chocolate Fudge
I love the taste of this, followed the recipe exactly using premium Gharadhalli white baking chocolate for the middle. Yummy Andes mint taste. However, I will not be making it again and gave it only 3 stars because it was very, very greasy for me. Maybe I did something wrong, not sure, b/c I see so many glowing reviews. When I put each layer in the pan to refrigerate, a layer of "grease" formed each time on top. I sopped it up with paper towels and continued. After refrigerating for several hours, the fudge set up, but was very hard to cut, and I could not get the whole thing out of the pan (waxed paper just tore). After only 10 min sitting on the counter, it began to get greasy again (though not soft). Will not be giving as gifts as planned, probably will throw out the rest, sadly :(

Salmon Fillets with Creamy Dill
Very yummy! I used fat-free mayo, which tasted great on the fish, but even so didn't even use all of it (it made a lot for 4 filets of salmon). I baked it at 375 for 30 minutes, but it did turn out a bit dry. Next time I will either bake for less time or at a lower temp. Regardless, my 2-year-old son gobbled up an entire piece of fish, which is always this mommy's ultimate taste test! Will make again and share with my husband when he is home!

St. Patrick's Day Zucchini-Oatmeal Cookies
Toddler Approved! I tried these cookies to use up some zucchini I had left over, and as a possibility for St. Patty's Day cookies. I made the recipe as written, except that I added a Tbsp. ground flaxseed to the dry ingredients. They are not a sweet cookie, and almost taste "good for you" (which is what I'm seeking anyway), but my 2-year-old son gobbled up his and begged for more. He is a tough critic when it comes to my cookies & really doesn't care for sweets. Needless to say, I will be making these again! I did add a few drops of green food coloring with St. Patty's Day in mind; it just tinted them and I will probably do that again for my cookie tray. Thanks for sharing!
