Spicy Korean Slow Cooked Chicken (Dhak Dori Tang)

My husband said this was the best thing that I've made for him in the 13 years we've been married :) I did make the following changes, however: I had a whole roaster chicken, which I cut up and used for this recipe the wings, thighs, drumsticks and a few small pieces of breast (I used the whole breast for a different, non spicy recipe). I left the chicken pieces on the bone and trimmed the skin on them and then browned in batches in 1tbsp of canola oil. I removed the chicken and added the vegetables to the pan to soften, switching out the potatoes for 3 stalks of celery since I planned to serve this over rice. When the vegetables were soft I added Srirarcha (didn't have the gochujang but would like to try in the future) and the chili pepper flakes and stirred for a minute. I added the water and soy sauce then nestles the chicken pieces in the vegetables, covered and simmered for about 25 minutes, turning occasionally. I didn't add salt since I was using regular soy sauce. definitely a keeper, and am sure my hubby will insist I make it again. Will try the gochujang at some point too. As a note, my husband is from Nigeria and likes spicy food, usually adding hot sauce to everything and he didn't have to the way I made this, so note if you like spicy or want to reduce the heat :)

Chicken Mushroom Stew

Loved this! Yes, it mild tasting but that's part of what makes it great. It's a nice, hearty, warming stew great to dip bread in! Definitely recommend it, I made it as written except I forgot to put the spring onions in and didn't have a leek and just sprinkled Italian Seasoning in since I didn't have the fresh herbs. Will make again!

Rosemary Ranch Chicken Kabobs

Awesome recipe! I have made it as written and with twists and all come out great :) Recently, on a cold rainy Dec night I have made it with 4 chicken breasts cut up into bite sized pieces, half a red bell pepper, a small onion and 2 celery ribs chopped up in a 13x9 in the oven at 375 for 15-20 min and it's amazing over rice. Kids gobbled it right up. I substituted dry Italian seasoning for the rosemary in a pinch, decreased the Worcester since my daughter doesn't care for it, and decreased olive oil to 1/4c when baking, good flavor. Thanks, this recipe is a keeper, especially love that you can twist it to fit what happens to be in your pantry with great results!

Hearty Hoppin' John Stew

Easy & versatile. I almost had all the ingredients for this & was looking for a recipe to use black-eyed peas. I used smoked beef sausage diced up in place of the bulk sausage, diced tomatoes without green Chiles, long grain brown rice, a yellow bell pepper and Emerils BAM seasoning with a pinch of cayenne in place of the Cajun seasoning because it's what I happened to have on hand. Followed instructions as written and it came out perfect. Great belly-warming dinner on a cold Feb nite. Plus with a 45 min simmer time I got a nice little workout on the treadmill!
