Cool Whipped Frosting

Love this light frosting.....I use a little less milk though, and have no problem frosting a layer cake this way. My family really appreciates the lightness this frosting adds to a dessert. Not to mention that it is far less sweet than most icings. I love to use a chocolate pudding mix in this on a rich chocolate cake to cut the heaviness. Using a lemon pudding mix is also really good on a white or lemon cake. Someone said they were "embarassed" by the cool whip. If that is the case why would one buy it in the first place???

Rhubarb Cake I

Yum, yum, yum, yum, yum! This is great warm with real vanilla ice cream! Very moist, just like I have come to expect from recipes that call for buttermilk. It is by far one of my favorite ingredients because it usually seems to deliver tender moist products. I add 4 cups of rhubarb for enough flavor. I love the sweet/tart combo. Much like a coffee cake.

Carrot Cake III

This is the best carrot cake recipe I've found so far. My children often request this for their birthdays (sans nuts). I use a 16oz bag of baby carrots and shred them in the food processor, then give them a light chop so there are no big long strips. My children actually prefer this with half whole wheat flour (for flavor...not health reasons, we seem to like the complexity that it adds). I also add another teaspoon of cinnamon. I usually make a three layer cake, lining the pans with parchment paper and then frost with a cream cheese frosting with less sugar. The sweetness in this one is overwhelming to my family. We like a bit of the tang from the cream cheese to compliment the sweet cake. ****My professor at culinary school suggested repacing some of the oil with melted butter, I used 3/4 cup oil and 1/2 cup melted butter last time I made it.....better than ever! Thank you!

Tiramisu II

This is a wonderful recipe. I fold the whipped cream into the mascarpone mixture in step two. I also layer this in a trifle bowl for a beautiful presentation.

Marinated Vegetable Medley

I love this recipe. It is so delicious. Have been making it for four years now and I am shocked that there are not tons of reviews by now. This is a great side dish that can (and needs to) be made ahead. Definately do use a slotted spoon to serve, as the recipe submitter suggests. You may even cut down a bit on the oil, and add extra veggies as I do. But I totally love this and it is such a great way to eat fresh veggies. Great in the warmer months. Such a unique addition to my recipe box. Thank you.

Fudge Truffle Cheesecake

Yummy. Very sweet. Not much of a cheesecake flavor, IMO. Just creamy chocolate. I used bittersweet chocolate and it was still really sweet. It is extremely rich and a small piece topped with freshly whipped cream is perfect. Made this for my moms birthday one year and was driving up to see her in my friends Lexus. Got into an accident and totalled the Lexus. My first thought was "My cake!!!!" Well, it had been smashed along with the car. I still took it to moms party. Showed up with a smashed cake in a smashed car. It tasted awesome!!! No one cared about how it looked. And my friend was amazingly forgiving...

Tiramisu Cheesecake

The filling was very good. I think the mascarpone is very important. It has a nutty-ness that cream cheese does not, also it does not have the tang that cream cheese and sour cream have (do not overbeat the mascarpone or it will become grainy, I always beat the cream cheese much longer before adding the mascarpone). I didn't care for the crust. I make tiramisu quite often and love the lady fingers in that, but here it didn't work for me. I used more coffee liqueur than called for and needed a 10" springform rather than an 8 or 9" one. I always bake cheesecakes in a water bath and leave them in the turned off oven for an hour to prevent cracks. I think that overbeating once the eggs are added also causes cracks because the air is beaten into the eggs, causing the cake to rise while baking and then deflate leaving a crack.This is why I beat everythin extremely well so that it is perfectly smooth before adding the eggs. Thank you!

Sweet Potato Pie I

Top notch recipe!!!! I have made this MANY times. I add 1 TB lemon juice to heighten the flavor and a TB of flour as a thickener. I also use more sweet potato than the recipe calls for, my family likes it this way...slightly healthier and less sweet. I beat the sweet potatoes very long in my stand mixer to get them super smooth and remove all the strings, which stick to the beaters. This is a great option when you want a delicious and nutritional dessert!!!

Clark's Quiche

One of the BEST recipes on this site. Everyone is shocked by how good this is. My family and friends especially love this when I add goat cheese crumbles instead of the montery jack. I mean....THAT is cooking for in your face flavor. Not timid at all. I sometimes add a 4.3 oz pkg. of Hormel picnic (real) bacon bits instead of cooking the bacon. It's an easy shortcut. I've made this for company who THOUGHT they didn't like quiche and totally changed their minds:) My boyfriend gave some to his father...who said he would just have a little taste...and he ended up eating a huge piece!

Turkey and Quinoa Meatloaf

Stuffed Peppers with Turkey and Vegetables

These are amazing. I like to use all red peppers because they taste oh so much better...not so bitter. I also double the mushrooms and add more tomato paste to make it more savory and help meld/stick the ingredients together, and use an entire 1 1/4 pound package of turkey. For the chopped peppers I use the whole thing. With these changes I can fill about 5 peppers. So yummy and so healthy. Thank you!
