Chocolate Oatmeal Drop Cookies

Nice texture. Moist. Very sweet. Made these because I had an extra box mix on hand, but I don't think I would buy a mix just to make these. I could definitely taste the cake mix. Loads of people at work loved these though.

Wacky Buckwheat Spice Cake

The flavor was very good (I love the strong buckwheat taste....the batter was amazing). The texture was different, but that is to be expected. Not sure if I will make this again. If I do I will add a cream cheese frosting.

Irish Cream Creme Brulee

These were pretty good. Bought a torch for this recipe (I'd been wanting one for quite a while). Could imagine any number of liqueurs in this. The Irish cream was pretty subtle. Thanks for the recipe.

Roasted Red Pepper Muffins

These are good. Pretty sweet though for a dinner muffin, but people seemed to like them this way. I used asiago cheese (twice as much...still was overpowered by the sweetness of the red peppers...though we could taste the cheese more when the muffins were cold). Roasted my own peppers on the grill. My BF said they could use some spice or herbs. Worth making again and experimenting with added flavor.

Cayenne Pretzels

These are good. Very addictive. I had two different bags of mini pretzels in my cabinet that I wanted to use up. One were the regular pretzel shape and the other were waffle shaped. The waffle shaped ones held the flavors much better. I used half butter and half oil and threw in some Frank's Hot Sauce because we really like heat:) I baked at 250 for 15 minutes. Thank you!

Sam's Famous Carrot Cake

This was pretty good. I prefer Carrot Cake three, though. I took this to work, where I take desserts almost every other day, and it was one of the few that wasn't totally gobbled up. Some people really did love it, though. Others said nothing, which is rare.

Jo's Chicken Liver Pate

This was alright. I love pate, and usually just wing it. This is the first time I have really followed a recipe for it. I had some problems not getting it smooth enough and had to push it through a metal strainer. I added lemon juice, which I love in pate. I love onions, but for me they were too strong in this recipe. Thank you, though for posting this recipe.

Cajun Crawfish and Shrimp Etouffe

This is amazing! We made it for fat tuesday. Put in a three pound bag of crawfish (before shelling). I would definately make this one again. Thank you. UPDATE: I have made this using pre-shelled crawfish and for some reason the taste suffered a lot, so I will go on shelling them from now on. I also read that to have about a pound of meat, it might be necessary to buy up to 5 pounds in the shell.

Almond Cream-Puff Ring

For now I am only rating the filling. I make as stated, but with only 1/2 tsp almond extract. I have used this many times to make the filling for a boston cream pie. It is sturdy enough to hold up to the extra cake layer, but still so soft and creamy. I can put the entire batch between two THIN layers of yellow cake, making it the creamiest boston cream pie I have ever tasted. I then top with a chocolate glaze. It is always a hit and gobbled up super fast.

Cheddar Bay Biscuits

Love these. Made them for my friends kids and they were a hit (fighting over the last one). I doubled the cheese and added garlic and chopped green onions to the dough, used buttermilk instead of water, and added extra garlic salt to the butter mixture. Thanks!

Winter Fruit Salad with Lemon Poppyseed Dressing

Soooooo Goooood. I don't use all the dressing. I suggest that you add it a little at a time, tossing the salad, until you have the amount of dressing that you desire. I also add about half the oil. Often use blue cheese instead of swiss. A wonderful blend of fruity and savory. Thank you so much! A wonderful salad!

Applesauce Salad

I grew up eating this. A few of my daughters and my niece really love this recipe. It is a nice change from plain jello and the fluffy jello salads. I personally don't care for it much, though, but it is easy to make and different.

Peanut Butter Cup Cookies

These are pretty good. I wish the cookie part had a stronger peanut butter flavor. In my oven, 8 minutes was a little too long for my cookies. Just remember to check them because every oven is different. (And I have an oven thermometer.)

Super Hot and Sour Shrimp Soup

My BF and I made this this weekend. He wanted a soup that reminded him of one he used to get from a Thai woman at a restaurant when he wasn't feeling good. We made a stock with the shrimp shells (used big, rather than salad sized, which we think was the right choice...at least for us) and added some clam juice and fish stock concentrate to the liquid. In the soup he wanted lemon grass like he was used to in the one from the restaurant. We used the canned mushrooms and also added some fresh shitake. We used a whole tube of Gourmet Garden's finely chopped red chilies because we couldn't find fresh. We like things HOT. This was nowhere near hot enough for us so we kept adding until it reached our desired heat level. We also doubled the cilantro because we love that flavor as well. Many of these ingredients are very salty. I was worried that our stock was not salty enough and a bit too bland, but when everything was added it was PLENTY salty, so I suggest not adding extra salt until the end. We loved this and he said it was just like the one from the restaurant. We had a blast making this together. I would have rated this a four but my BF was so happy with it that it gets a five:) Thank you so much!

Monster Cookies VI

Well, the first several times I made these I only used a half cup of white sugar and they were delicious. I just made them again with the full cup of white sugar and was dissapointed. They were sweeter, so the peanut butter and chocolate flavors did not stand out as much, and I really like to taste those flavors and let the candies add the extra sweetness. I use bittersweet chocolate.
