Pumpkin Ginger Cupcakes

Reviewed: Oct. 10, 2011
This stands at three stars right now. 5 if flavor was my only concern. I cook for a living and followed all the steps to the letter. My issue is that this recipe seems to make more than 24 and take longer than 20 minutes to bake (and I have an oven thermometer that says the temp is right on). I tried it twice. The second time I didn't even put all the batter in the 24 cups, yet it still was too much. I started checking at 20 minutes and kept them in several longer but they still were not done. My recomendation would be to definately try this recipe but don't try to fit all the batter into 24 cups, and to bake at least 25 minutes. ALSO, be warned that these are incredibly sweet. If you want to ice them I would think that a very lightly sweetened cream cheese would be best. I often cut my sugar in cream cheese frosting in half and think that would work well on these. Good luck!

Banana Sour Cream Bread

Reviewed: Oct. 1, 2011
This banana bread is very sweet with very little banana flavor compared to the breads I usually make. The texture is alright. Just very mediocre IMO. I'm throwing them away because I can make much better things to eat and will save my calories for those that are worth it.

Cherry Chutney

Reviewed: Sep. 10, 2011
I loved this! It's wonderful with crackers and goat or havarti cheese, as well as over pork. I have worked in catering and at fancy events we would prepare a cheese tray with many different cheeses and ramekins of honey (sprinkled with a few white sesame seeds) and chutney along with nice crackers. We provided little demitasse spoons and cheese knives so everyone could pick their favorite cracker and cheese and then drizzle some honey and chutney on top. The sweet/savory flavor is so sophisticated! This combination was always available at the most elegant events. Just be sure to not cook too long or you will end up with cherry jam!

Pumpkin Bundt Cake

Reviewed: Jul. 12, 2011
Most people really loved this. And so easy. I would like to say that I make everything by scratch (but that would be a lie). It's not because of the time involved in making a scratch cake (I mean, really, it's only about 10 more minutes at most) It's more because, while I typically find the flavor greatly improved in homemade cakes, it is sadly hard to beat the texture in box mixes.

Favorite Chocolate Cookies

These are very good cookies. Moist and chewy on the inside. I work in catering and took these to work one day. We have a lot of yummy desserts there, but I offered these and everyone loved them, the chefs even complimented them:) Co workers kept coming by to grab "one more" all day. Thanks!

Thank you! This made perfect sushi and sashimi. Molded wonderfully, and had the flavor that compliments sushi so well. I prefer a bit less sugar though:)

Yum! The nutmeg makes 'em! This recipe totally opened my eyes to the power of nutmeg and I now seek other recipes that use this spice as well. So similar to donut holes!

Libby's® Famous Pumpkin Pie

Reviewed: Mar. 13, 2011
I have to say that I do not understand the ratings on this one at all. Sorry. Sure, there are worse recipes out there, but there are others that are so smooth and meltingly creamy that blow this recipe out of the water. This pie is dense and heavy compared to many others. I also find that adding just a few small candied yams to a pumpkin pie deepens the flavor without anyone knowing that there is anything in there but pumpkin. Using freshly minced ginger is far better than the dry spice as well, IMO:)

Blueberry Cream Cheese Pound Cake II

Reviewed: Mar. 13, 2011
This is one of my quick faves! I have been making it for years and every single person loves it. I use part of the drained juice from the can in place of the water. It makes it a little blue, but very yummy. Thanks sooo much!

Cream of Coconut Cake

Reviewed: Mar. 13, 2011
Very good! Super moist with a great texture, but not wet or soggy. I think it is perfect with a bit of coconut extract added to the cake and the frosting. I use a slightly different cream cheese frosting with about half as much sugar and find that the tang compliments the sweet coconut very well. Makes very pretty cupcakes.

Chocolate Chip Banana Muffins

Reviewed: Mar. 12, 2011
Super awesome! So so so yummy! Made them exactly as directed and they are perfect with great rise and moisture, but not dense at all. These make a wonderful snack or light desert when you feel the need for something sweet yet don't want to load up on excess sugar and chemicals and fat. My girls also love these, and my youngest rarely ever eats muffins. I use Ghiardelli bittersweet chips which are awesome. Thanks!

Classic Bran Muffins

Stop looking!!!! You will NEVER find a better bran muffin than this one. I have made these often for the last few years and have never met anyone who does not absolutely love them (even people who don't care if what they eat is healthy or not)! You can change these with "healthier" ingredients, but they are incredibly healthy as they are. I am a little underweight yet eat these all the time, just as the recipe states. Excellent and totally delicious source of fiber.Thanks. THANKS. THANKS!!!!!!!

Final Exam Brownies

Reviewed: Mar. 12, 2011
Decent brownies. Extremely sweet even though I cut down on the sugar, there was no depth of flavor, just super sweet chocolate loaded with stuff. I was disapointed in these, they were just very average. With so many incredible brownie recipes out there these are not worth making again.

World's Best Lasagna

Reviewed: Feb. 28, 2011
John, you are now my idol. Amazing. I make the sauce in the morning and put the ingredients together, then let sit in fridge for the rest of the day while I complete other recipes and cleaning for a dinner party. Remove it from the fridge an hour before cooking, then cook as directed. Do not leave out the fennel seed! It is soooo important to the flavor. I actually add even more to mine (crushed) along with some extra garlic, and sometimes throw some goat cheese in with the ricotta. People seem to love it this way. I also use no boil noodles....much easier, and keeps the lasagne from being watery.

Banana Crumb Muffins

Reviewed: Feb. 20, 2011
These are the best banana muffins I have ever tried. They bake up nice and high and are very attractive. They work well with either butter or canola oil, but I prefer the taste of these muffins when made as directed, with the melted butter. Yummmm. I haven't met a single person who did not like these and I have been baking them for years. Thanks so much!
