Lemon and Herb Risotto Cake
I used this recipe as a side dish to bring to a pig roast. Awesome recipe...everyone kept asking for the recipe. My husband was bummed that there wasn't any left to bring home. Instead of using leaks I used green onion. I also added garlic and ginger. I baked the rice in a muffin pan to get individual servings. I will definitly being cooking this again for my dinners at home as well as a side dish or appetizer to bring to gatherings. View the pics to see how these turn out when baking in the muffin pan.

Angela's Awesome Enchiladas
This truely is the best Enchilada recipe I have ever come across. The blend of chili's and the creamyness of the sauce really make this dish special. My husband insisted that I make these at least once a month.

Beef Peach Pie
Made this wonderful meatloaf last night and my husband coudn't stop talking about it all night. I made the recipe as is...no customizing. I didn't think the amount vinegar was over powering. The only problem I had was the pool of grease after cooking the meat. I drained as much as I could but still ended up with a small pool after complete cooking period. Still...an absolute delight and a welcomed upgrade to the normal meatloaf. Who knew that peaches and meatloaf would taste soooo good together. Thanks Diana.
