I made this pie filling yesterday afternoon, filled and baked the pie and cut it in the evening after warming it up in the oven for 10 minutes. It turned out GREAT! No runny filling leaking out everywhere; very tasty but a bit sweet. I will probably reduce the sugar next time and add some more cinnamon and nutmeg and will also add a bit of lemon juice and a tiny bit of lemon zest. I did use 1/2 cup of brown sugar when I melted the butter and sugar. Also I sifted the second 1/2 cup of sugar and cornstarch into the apple mixture to make sure it got distributed evenly. With these tweaks the pie turned out amazingly well! I did a lattice crust and 10 minutes before the pie was finished baking, I brushed the top with milk and sprinkled with turbinado sugar. Served with home made vanilla ice cream, it was a hit! Thanks so much!!
