David's Yellow Cake
This turned out amazing! I did some mods however. I realized I had 6 eggs and 3 really ripe bananas. Enter the perfect marriage of eggs/bananas. I used the 3 really ripe bananas and 2 egg yolks in place of the 8 egg yolks (you can sub 1 banana for 1 egg in any recipe usually. I did this all the time when I avoided dairy, and good for those watching cholesterol). I just taste-tested the resulting cupcakes because of my sneaky 2 year old who swiped one from the counter before appointed birthday cupcake time for my 12yo. They are moist and amazing, and using the egg yolks with the bananas there is no dryness to fathom. Everything else I followed to original recipe. They taste like yellow cake meets banana bread, with not too much of either taking over. All ingredients used were organic (really makes a huge difference in quality, healthfulness, and taste).
