Delicious Ham and Potato Soup

Slow Cooker Enchiladas

I made this, modifying with ingredients I already had. Made my own taco seasoning, used flour tortillas, and instead of using soup, I used ricotta cheese. I also added frozen corn into the cheese mixture and baked for 45 min at 400 F. Overall it was good, but I think I will add black beans to the meat and add more salsa to that. I served it with yellow rice.

Peanut Butter Pie I

My husband said this was the best dessert that I have ever made. Turned out really good, and was easy to make. My only suggestion would be less time for baking the crust- it was a little hard when I baked it for 10 minutes.

Sweet Potato Corn Bread

This corn bread turned out great! I used left over sweet potato casserole from Thanksgiving for this recipe. I changed the ratio of the corn meal and flour, so it was 2 and 1/2 c flour and 1 and 1/2 c corn meal. I didn't have any eggs, so didn't include those, but I doubled the amount of milk. It was a little sweet because my sweet potato casserole already had brown sugar and maple syrup in it, so next time I will add a little less sugar. It was very moist and delicious! Will make again.

Cornucopia

I made this for Thanksgiving and it turned out great. My guests could not get over that I made it. Everyone thought I bought the cornucopia! I could only find biscuit dough at the grocery store, so I used that. I took two biscuit dough chunks at a time and rolled them together into long skinny strands and spiraled those around the cone. I glazed the cornucopia with the egg when I was done putting it together. I ended up putting dinner roles in the center. Will make again, and a spinach dip to go with for next time.
