Delicious Ham and Potato Soup

Potato soup was such a mystery before. It makes me feel like an idiot. I put in heaping teaspoons of pepper, which ended up being (almost) too much. Thankfully, I love pepper! I chopped up too much potato, so it turned into a double batch. Substituted two tablespoons of bacon grease for equal butter, added carrots, a little more onion than was called for. This is so good. Thank you for sharing... and for making me less of an idiot.

Chewy Brownies

These are the best brownies I have ever had, including fancy ones from coffee shops. Years from now, my children will not know to properly give you credit for this recipe. It will probably be the thing that they brag about me for, and the reason their schools make sure I always know about the bake sale. So, I thank you now. I also curse you, because I have diabetes and have had to exercise an unreasonable amount of willpower since making them. Don't worry, I am sharing!(I also skipped the glaze. I don't even want to KNOW how they taste with that.) Again, from the bottom of my vial of insulin, I thank you. Its not like I wouldn't have eaten a brownie, but it is nice when it is a brownie WORTH eating.

Blueberry Sour Cream Coffee Cake on a diet

I made this recipe today, after a couple of tries with the original. I used a 1 1/4 cup of real sugar and 1/2 cup of the fake stuff. Sorta let the end of the bag of sugar decide my percentage. I also used "light" unsalted butter. I wouldn't do that again. Its not as delicious as the original, but honestly if that keeps me from eating the whole thing its better. Mine cooked in the suggested time, which was about 12 minutes shorter than when I made it with no alterations. Although this time I had frozen blueberries and when making the "original" I used fresh. I liked that it was less dense.

Blueberry Sour Cream Coffee Cake

1 - I hate using a Bundt pan. Use plenty of flour and not too much spray. 2 - This recipe is amazing. I made it as described the first time, but used a little less white sugar the second time through. I also did three layers of filling because my top layer burned too much the first time. Next time I make it for me, I'm going to try greek yogurt & sub out more sugar. I can't keep away from it! A little less delicious might be okay.
