I'll give 5 stars, although I think 4.5 would be more accurate. I only made these once so far, and all the muffins came out ok. I tried to disturb the flour as little as possible just like other review suggested, and the results were spongy and almost rubbery. The batter was quite strange, it was very stiff. Yogurt, after coming to contact with the acidic lemon juice, started to form lumps. I baked mine (2inch muffin) at 375 F for 18min. Nice golden brown and soft, fluffy texture. I omitted lemon zest and the frosting, and the muffins taste just sweet, without any lemon flavor. One more thing, my muffins didn't really rise much, and I don't know why. Perhaps, next time, I'll put in more baking soda or try mixing the ingredients differently. Overall, a very nice muffin, I will make these again
