Slow Cooker London Broil

Reviewed: Feb. 10, 2013
This was SO good. I added about 6 potatoes, cubed; 3 carrots, sliced into rounds; about a lb of mushrooms, cut in half; and an onion cut into chunks. I put them all in the bottom of the crock pot and placed the meat on top. I mixed the two cans of soup together and added a packet of au jus mix to the soups (I didn't have onion soup mix). You could probably just a cube or two of beef bullion. I seasoned the meat with a creole seasoning rub and lots of salt before I browned it. I also deglazed the pan with a little red wine and poured it on the meat in the crock just before i poured the soups over it. The gravy these 2 soups makes is just SO good! And with just a touch of heat with the creole seasoning...mmm, mmm. My daughter's favorite meal is pot roast and she LOVED it. I'll make my crock pot pot roast this way from now on. You really can't beat it!!

Lebanese Chicken and Potatoes

Reviewed: Jan. 22, 2013
I had a friend who went back to Lebanon who, when living here, would make this dish. I thought I'd look up a recipe for it. This WOULD have fit the bill if I had stuck to the original recipe (hence the 5 stars). This dish NEEDS lots of lemon. I will make it again using all the lemon juice called for. And I think it needed quite a bit of salt and more garlic.

Bean Soup

Reviewed: Dec. 28, 2012
This was just like mom used to make. Well, with a few minor tweaks. I did drain and rinse the beans first.. I didn't need all that ham, just the ham off the bone. I added canned tomatoes that I had chopped finely WITH the juice. I also added one clove of garlic, and a lot more pepper, and just a touch of cayenne pepper, touch of ground cloves, and I used chicken broth I had left over for half the liquid. It's cooking now and I'm thinking about adding some thyme too!! Very good starter recipe to add your special touch to.

WONDERFUL!! Try it with a sprinkling of parmesan cheese! And don't skimp--use real BUTTER, not margarine. Your guests will rave!

London Broil I

Reviewed: Jun. 5, 2006
Very good. The answer to the toughness of the cut is that you need to add an acid. I added lemon juice, but you could add vinegar--balsamic would be great. Very nice tasting marinade

Pasta Lasagna

Reviewed: Apr. 10, 2006
Reading the other reviews and having just made this myself, I find the answer to the "needing more sauce" and "too much ricotta" problems is using 1 full lb of ground beef. The only thing I changed was using the 1lb of ground beef and also putting some onions, mushrooms and garlic into the beef mixture. The only problem I ran into--and it wasn't really a problem, is that maybe I would also add a little more pasta--another 3-4 oz. Otherwise, this recipe is quick and easy and a big hit!!

White Bean and Artichoke Salad

Reviewed: Apr. 17, 2003
This is a wonderful recipe. The mint and parsley really make this a flavorful salad. I used kidney beans in addition to the white beans for some color. This salad is best when refrigerated overnight to let the flavors meld. Try it--you'll love it!

Apricot Brisket

Reviewed: Apr. 17, 2003
This recipe is WONDERFUL! If you think it would be too sweet with the apricots, you're wrong! This makes a lovely, savory gravy. My family loved it! I made it for Passover and got RAVES! This one is a keeper! Thanks!
