Ham and Swiss Casserole

As written, probably kind of bland. I added seasoning that suited my families tastes. I sauted veggies & added broccoli. I used cream of chicken soup, but that is my personal preference. I'd recommend combining ingredients vs layering. I also added about 1/2 cup chicken broth to thin it out a bit. I also topped w/ a 1/2 cup layer if stuffing mix to give a bit of crunch.

Roasted Vegetables

Very good. I often substitute different veggies for some the ones listed in the recipe. I've made with & without the vinegar and very good both ways. I've used fresh and dried herbs. For those that have written negative reviews when using dried herbs, please keep in mind 1 TBS fresh = 1 tsp dried.

Easy OREO Truffles

I've been making these for years. (Funny my original recipe calls for 20 oz. pkg, but the pkg sizes keep decreasing) I don't reserve any of the cookie crumbs, but mix it all w/ the cream cheese. After making the balls, I refrigerate for an hour before dipping in the chocolate. I use chocolate discs from the candy store or other quick hardening chocolate coating and melt the chocolate in a double boiler to prevent over heating. Plus it keeps the chocolate hot while dipping.

Chicken Breasts with Balsamic Vinegar and Garlic

I've been trying to replicate a recipe from one of my favorite restaurants and this comes pretty close. I pounded the chicken to even thickness, doubled the sauce and since I don't like mushrooms, I sauteed some red & green peppers and red onions with it.

Pork Chops with Raspberry Sauce

Whole family loved, even my picky daughter who doesn't like pork. I would increase the sauce. I didn't have white wine vinegar so I used balsamic vinegar.

Orange Tapioca Salad

Yummy! Tastes like a creamsicle. Although I can't find instant tapioca anymore, the Jell-o cook-and-serve does work. I also use the 20 oz can of crushed pineapple instead of 8 oz.

Apple Pumpkin Muffins

I've been making this recipe for years from my QC cookbook. They are devoured by the kids at their Fall parties at school. Yes they are sweet and delicious, but they have pumpkin and apple so it's better than bringing in candy!

Jiffy Jambalaya

Quick, easy, kids like, so I like. I omit the oil and saute the pepper and onion with the sausage/kielbasa. I add some cumin, cayenne and/or hot sauce after the fact for the adults. This recipe is a good standby when kielbasa is buy 1 get 2 free at the grocery store because the rest of the ingredients are usually on hand.

Cranberry Zucchini Bread

I make this every Christmas. I either make it at Thanksgiving and freeze the other loaf for Christmas or make the other loaf into mini loafs and give to teachers as gifts. Great recipe, nice and moist.

Creamy Penne Pasta

Way too cream cheesy for my taste. I used lo-fat cream cheese and dried spices along with a can of diced tomatoes to add liquid as others suggested. I then tried to add milk and butter to try to tame the cream cheese taste, but didn't succeed.

Slow Cooker Chicken and Dumplings

Very good. I could see how it could be kind of bland as is. I added some garlic, thyme, rosemary and pepper. I also used one can of cream of chick and cream of celery. Added some carrots, celery and peas. Omitted the butter. As others did,substituted chicken broth for the water - used about 1 1/2 cups to 2 cups. (Used low-sodium, low fat products)

Slow Cooker Sweet and Tangy Chicken

Very easy and tasty. I use brown sugar barbecue sauce and add carrots. I also add cornstarch during the last hour or so to thicken the sauce and serve over rice.

Island Kielbasa in a Slow Cooker

This is a good recipe with some modifications. I substituted the ketchup w/ brown sugar barbeque sauce and added only a 1/2 cup brown sugar. I also added green pepper and onion. I've made this as an appetizer and topped it over rice to make it a meal.
