Chicken Nacho Bake

Easy Tomato Soup Spice Cake

Made this cake for the first time today to take to a family meal to serve as dessert. When it was baking it filled the house with an amazing aroma that was wafting from the oven. The cake came out perfect. It was moist and delicious. I used a whipped cream cheese frosting. I have a busy life and don't always have time to make things from "scratch" so this fit the bill perfectly!

Pineapple Banana Bread

Lemon Icebox Pie III

Really good flavor. Thought the freshly squeezed lemon juice gave the pie a real zing! I didn't get the right texture with mine though so make sure you use an electric mixer (I don't own one) or it comes out lumpy. Mine was tasty just not as pretty to look at.

Chocolate Pretzel Rings

So simple and easy! I made a ton of these this year for the holidays and everybody loved them. Great recipe if you don't have a lot of time to spend in the kitchen and are looking for something fast. I will definitely make these again.

Man Dip

I made four pans of this dip for two different get-togethers over the holiday season and everybody loved it. Needless to say, there were no leftovers! The only thing I did differently was to add a layer of salsa over the chilli layer. I will make this again for sure!

Strawberry Yogurt Pie I

Had a nice, light strawberry flavor. Found that the pie was hard to cut and eat after taking it out of the freezer though, even after sitting out for a little while. I really don't think this pie really even needs to be frozen at all. Next time I will just make the filling, fill the pie shell and keep it in the fridge instead of the freezer. Has a fluffy texture that way instead of being hard as a bullet when frozen.

Baked Hash Browns

This turned out amazing. Even people that thought they wouldn't like it because it was on the fatty side, ended up loving it and wanting the recipe. Very easy to make and perfect for a brunch which is what I used it for. Thanks!

Chili Dog Casserole I

Baked Onion Dip II

This dip did taste good but I could only eat so much of it in one sitting. The onion flavor is great but I found the dip to be very heavy and rich overall. I served it with mixed crackers and multigrain tostitos. I also found that 45 minutes was too long to leave it in the oven for. Next time I will check it after 35 minutes. My oven does seem to cook hot though so I would just keep an eye on it to make sure it doesn't get too brown.

Sweet Marie Bars

This recipe is one that I discovered after going through my grandmothers old cookbooks after she had passed away. I made it that very night and I can see why she liked it, it's very sweet and she had a sweet tooth! We really enjoyed it and I will be making it again for sure!

Seven Layer Tortilla Pie

This was fantastic and not hard to make. It's also really filling. I deviated from the recipe a little. I cooked ground beef with a packet of taco seasoning. Separately I cooked a mixture of tomato, green onion, red pepper and yellow pepper in butter. When I layered the soft taco shells I did a layer of meat with salsa and shredded cheese, then the next layer was meat with the peppers, onion and tomato mixture and shredded cheese and then repeated the layers until my mixture ran out. I poured some salsa over top of the finished product and sprinkled more cheese and then baked. Each piece received a dollop of sour cream on top just before serving. I served each piece with a side of rice mixed with lentils. It was amazing looking and tasting. What impressed me the most with this was how easily it was to slice and dish out. I thought it might be messy or difficult but it wasn't at all. It sliced up just like soft butter and stayed together perfectly just as a lasagna would. I will definitely be making this again in the future.

Rhubarb Strawberry Crunch

I had some strawberries and rhubarb in the freezer that needed to be used up. I decided that today was the day I was going to find a recipe so I could finally get these out of my freezer. I didn't have any brown sugar on hand so I subbed that out for white. My house had the most heavenly smell when this was baking in the oven. Once baked, it presented well. It looked nice enough that I would not hesitate to make this for a pot luck or some such event. I served it with vanilla bean ice cream and let me tell you, it was perfect. My partner described it as being "delightful" and said he could eat a large quantity of it. It's always a good sign when he says that as he's quite a picky eater. I was very happy with the outcome of this dessert and will most definitely make it again in the future.

Toffee Cake

Very good! I made three desserts for a large family get-together and this one was gone first. Got asked for the recipe as well so that's always a good sign. Really simple to make and impressed everyone. Would make this one again.
