Best Ever Meatloaf I

Tasted okay, but not the best we've tasted. Youngest daughter, who loves meatloaf any way it's made, enjoyed it. I thought the oatmeal gave it an unusual texture.

Cake Mixes from Scratch and Variations

I made the yellow cake version, but thought the cake was very bland. It was only saved by the ButterCream frosting recipe that is also here at allrecipes.com, which was VERY sweet. Sorry, but I think I will keep looking for a cake recipe.

Southern Butter Rolls

My first attempt with this recipe wasn't all that great, but my second attempt...WOW! I made my rolls a little bigger so I yielded 18 rolls instead of the 24 stated in the recipe. I used butter flavored shortening, and melted it first in a saucepan, then added the cold water to it. That made the water/shortening mixture the perfect temperature for the flour mixture. The 18 rolls turned out large and fluffy, with a great taste that didn't need any extra butter on top. My older daughter ate 3 of these large rolls and almost ignored the rest of the dinner!

Taco Casserole

My husband absolutely loved this. I added a can of refried beans to the bottom of the baking dish, then layered the other stuff over it. I'll be making this again soon, with a lot more chips on top, per the hubby's request. Thanks for this recipe.

Baked Curry Chicken

I thought the sauce came out excellent! I used chicken breasts instead of the pieces since my family prefers breast meat. I'd recommend doubling the sauce because it tastes great over rice. I'll be making this again, that's for sure.

Double Layer Chocolate Peanut Butter Pie

Really tasty! I used Jello's Devil's Food flavored instant pudding which gave it a more intense chocolate flavor. I like the idea of using a chocolate crust, though I didn't use it this time. I also used 5 mini PB cups cut in quarters and put the pieces (and the crumbs produced while cutting them) over the pie. I will definitely make this again!

Delicious Peanut Butter Cookies

This is a really good peanut butter cookie recipe. It wasn't as greasy as some of the other PB cookie recipes I've tried, and holds its shape really well. I added the cross marks on it using my fork. The texture is really good, not too crunchy, not too soft, and has a good peanut butter flavor. I'd like to try this with an old fashioned peanut butter and perhaps add a little chopped peanuts to the batter.

Candied Chicken Breasts

My husband and I and older daughter enjoyed this chicken, but younger one wasn't crazy about it. I thought it had a slight BBQ/teriyaki flavor to it, which I thought was perfect for the chicken.

Really tasty! The ingredients were very different but the chicken came out moist and delicious. My youngest even ate a whole chicken breast (she usually just eats 1/2 of one). I used prepared honey-mustard which she loves anyway.
