I'm not sure what happened, but my dough was quite stiff and unrollable...however, I am giving it 4 stars because the cookies I ended up making with it tasted great! Even my youngest daughter, who is NOT normally a fan of ginger snaps or gingerbread cookies said, "Mom, can you make these cookies again?" What I ended up doing with my unrollable dough was form them into balls (like peanut butter cookies), put them on the cookie sheet, and flatted them with my palm, then baked them. They took somewhat longer than the time in the recipe (approximately 15-18 min), but they came out crispy on the outer edges and moist on the inside. So I will make this again and it won't matter if the dough is unrollable!!!
