Irish Soda Bread

Made this tonight and it's already gone! This turned out great. I did make a couple of changes: doubled the sugar(and used brown because I couldn't find the white sugar), and used evaporated milk/vinegar since I didn't have buttermilk OR regular milk. Everyone liked this more than the dinner!

Stacey's Hamburger Seasoning

This seasoning is great! I didn't just use it in my hamburger (which was why I made a batch of it in the first place) but I added it to all sorts of things I was cooking: meatloaf, stew, even in vegetables such as corn! My husband raved about the corn! I DID just add a pinch of cayenne instead of 1/4 tsp since my daughter does not like anything spicy, and she liked this as well!

Peppery Onion Bread

This was excellent..probably one of the better breads. I used milk instead of water/dry milk powder (didn't have the powder), but followed everything else to the letter, and used my bread machine. Baked up wonderfully, light brown, with a super soft interior. Will definitely make this again.

Rainbow Clown Cake

My youngest daughter loves rainbow colors so I made this for her birthday yesterday. I did this in a rectangle 9x13 pan so I didn't think I would get the nice even layer effect, but it turned out better than expected, with a slight swirl so it looked tie dyed. I used gel food coloring from the local crafts store. This was excellent and produced very vivid and bright colors. I posted a photo of it on my Facebook page and I got rave reviews on how it looked. Tastes good too. By the way, my daughter loved it, and now her older sister wants one!

Pasta with Lentil Soup Sauce

This was surprisingly good. My daughter wasn't the biggest fan, however; but my husband is easy to please and said it was good. I did add onions and green pepper. Personally I will make this again but maybe when my daughter is not eating dinner at home.

Quick and Easy Brownies

This recipe turned out excellent. I couldn't believe how easy this was..only took maybe 5 minutes longer than opening a boxed brownie mix! The only change I made was to use butter flavored shortening instead of butter (I didn't have enough butter). Personally I think doubling the walnuts would be better, at least what little I got to eat...my daughter and mostly my husband wolfed it down! My husband even joked don't make it again because he wants to eat the whole pan in one sitting! Definitely going to try it again with double walnuts and maybe I will also try pecans.

Washboard Cookies

Excellent cookies. I have tried this twice using some of the suggestions others have commented on. First batch, since I had light brown sugar instead of dark brown, I added a little molasses (about 1 TBSP) and 1/4 tsp cinnamon. Next batch I added the cinnamon, added 1/4 tsp almond extract with the vanilla, but forgot the molasses. With both batches, I added honey roasted chopped pecans. I'd have to say the way I did it originally was better. The almond extract covered up the subtleness of the cinnamon. For the next batch I try (definitely soon!), I might add some mini semi-sweet chocolate chips along with the pecans.

Milly's Oatmeal Brownies

This seemed more like a bar cookie rather than a 'brownie', but it doesn't matter...this tasted great! I used butter flavored shortening, mini chocolate chips and chopped pecans (just used what I had in the house). I also baked it a little differently; 20 min at 350, the middle was still soft so I lowered the temperature to 325 and baked it for another 8 minutes so I would not have burned edges. This worked PERFECTLY-center baked and edges still soft. This recipe really can take on different flavors depending on the add ins.

Mexican Lasagna

This turned out great. What little was left over went to work with my husband for lunch, he liked it that much. I couldn't find shredded Colby so I just used vermont cheddar, and I added some drained canned black beans that I added some chili powder, cumin, and Adobo Seasoning, and then just layered all this. Served with a salad, WOW this was good eating. Definitely will make again!

Awesome Slow Cooker Pot Roast

I have made this many times, and it's absolutely delicious! I don't add as much water though, maybe half a cup, then I cover the meat with the soupy mixture, set the timer and walk away! My daughter, who is not a big beef fan, LOVES this dish!

Fruit Salad

I took the advice of a few reviewers and made this today with these changes: strawberry filling instead of cherry, added a small can of drained mandarin oranges, a small can of drained pineapple chunks, added 1 banana, used only 1/2 of the container of whipped topping (french vanilla flavor), 1/2 the can of condensed milk (used fat free version), did NOT add the pecans but added about 1/2-3/4 cup of toasted coconut, which made it more like an ambrosia recipe but all of this was a great combo. This was scarfed down by everyone in the family. My daughter said to make another batch ASAP! And since I still have 1/2 container of topping and 1/2 can of condensed milk, I have a good excuse to 'use them up'!

Chicken Ranch Enchiladas

Saw all the good reviews this got so I tried this recipe, but was sorely disappointed. I am only giving this two stars because my husband and daughter said it was "OK", but personally I didn't like this at all. Way too much sour cream flavor in this, which is probably why because I am not a big sour cream fan. It also seemed to be missing something but am not sure what. Maybe a more cheesy sauce would help it? I'm not sure but I don't plan to try it again.

Potato Bread I

I just made this for the first time today, and I will have to agree with some of the other reviewers..there is not enough water. It was good I looked at the bread machine after I started it and before I went out for the day, otherwise there would not have been bread at all! Once I got the extra water in (probably to total 1 to 1 1/4 cup), the dough formed fine and it made a light and fluffy bread. Good flavor. I may tweek this recipe a bit. I prefer more potato flavor, and a sweeter dough. Otherwise though, this turned out well.

Macaroni and Cheese IV

My daughter and husband really liked this dish. Like the others before me, I too made some modifications since I thought 2 boxes of pasta would be way too much. I used one box of tri-colored rotini, a bag of Soy crumbles (made it vegetarian!), one 16 oz bag of shredded sharp cheddar cheese, a 14oz can of diced Fire Roasted tomatoes, diced onion and green pepper, shredded zucchini, carrot, and mushroom, and half of a 16 oz bottle of regular V-8. My husband liked it so much he wants it again this week, but with 'real' meat in it this time! :)

Wave Your Flag Cake

My workplace had a Memorial Day lunch yesterday and we all contributed a dish...this was what I chose to make and bring. I did use an extra deep 9x13 pan which required more jello. (I used an additional 4 serving sized box). I used sugar free jello, and extra creamy Cool Whip. I GOT RAVE REVIEWS and more than one request for the recipe!

Delicious Rosemary Bread

I have made this bread a few times and it is excellent. My daughter is not a big fan of rosemary but likes this bread when I cut the rosemary down but up the italian seasoning. I plan on making this bread just to made bread cubes for my stuffing this year. I think it will give it a lot of flavor.

Teriyaki Wraps

way, WAYYYYYYYYY too salty! No one could eat this made the way this recipe is written with that much teriyaki sauce! However, I did try this again using 1/2 to 3/4 cup, which made it a little better.

Pumpkin Flax Quickbread

This is great pumpkin bread! I was looking for recipes that had no dairy or egg in it and this one came up...I too have done what the previous reviewer mentioned and tried this with the Splenda/sugar baking mix and it was excellent as well.

Cranberry Sauce II

WOW..I had no idea how easy this was! My husband has given up things with High Fructose Corn Syrup in them and the cranberry sauce in a can that we normally got has that in it, so I thought I'd try making it myself, using this recipe. This was extremely tasty...even my two daughters, who are not a big fan of cranberry sauce in general, thought this tasted pretty good and actually ate some!
