Six Can Chicken Tortilla Soup

Definitely good with the suggestions the others have said: cream of chicken soup, chili powder, cumin, garlic/garlic powder, fresh cilantro. Chopping some onions and peppers make it tasty also. If you are using plain diced tomatoes (instead of the ones with them already in it like Rotel), definitely throw in a can of chopped green chilies for extra flavor.

Doggie Birthday Cake

Made this yesterday and served this today to my dog Drizzy, who turned 5 years old today. I did have to make some substitutions since I didn't have honey, and also due to her skin allergies she doesn't eat grains. So I substituted a gluten free baking mix (made out of bean and potato flours), changed to coconut oil, and added shredded coconut instead of honey. Everything else stayed the same including the carrots. I did find I had to add some water to get more of a batter consistency since the shredded coconut absorbed some of the moisture. I baked this for approximately 20-25 minutes in a round 8" pan. Made a 'frosting' out of peanut butter and plain greek yogurt. My dog went absolutely wild for the cake, and the dog we are dogsitting also loved it. My dog licked the floor for crumbs until I got the vacuum cleaner out!

Barbeque Beef Casserole

Making this again tonight! First time around, I followed some others' ideas, with the 1 cup of BBQ sauce and not draining the tomatoes. I did add onion and celery (ran out of green pepper), and garlic. Tonight I am also adding some shredded carrots chopped fine just for extra nutrition and color along with the corn. Used one box of the Krusteze cornbread mix. Last time, I added chopped green chilies and cheese to the cornbread mix, and also creamed corn to replace the oil and milk. That was just to see if it would work and this was EXCELLENT. This is really a great recipe to experiment with, and with simple ingredients. Gave this 4 stars due to my changes, but why not be creative while cooking?

Oatmeal Raisin Cookies VI

Delicious! I too soaked the raisins. I ended up using 2 1/2 cups of oatmeal but I should have used all 3 cups, due to the soaked raisins the dough was quite wet. Added a little more flour to compensate but I think the oats would have been better. Also did 1/2 baking soda and 1 1/2 baking powder so they wouldn't be flat. One last thing-due to some others saying how bland they were, I used APPLE PIE SPICE which gave it a great flavor! I used 2 tsps, I think a little more would have been even better. Otherwise, loved this cookie.

Healthier Cream Cheese Frosting II

Great frosting! I did use 6TBS of butter instead, but it came out awesome. Thick and rich tasting. I just wanted to eat it straight from the bowl! I used this to frost the Pumpkin Sheet Cake from this site and had more than plenty, with a little left over even.

Pumpkin Sheet Cake

I did make some changes to this, and am reviewing mainly to remember them for next time, and there will be a next time! Used 8oz of applesauce, and 2 tablespoons of oil, and used 3 eggs. Added 3 tsp of pumpkin pie spice, plus a shake of cinnamon (I may try 2 1/2 tsp of pumpkin pie spice and 1/2 to 1 tsp of cinnamon next time), which gave it enough flavor. I also used brown sugar instead of white but only because I found out I was out of it at the last minute. I think I will keep this ingredient though, much more depth of flavor with brown sugar. I topped this with the Healthier Cream Cheese Frosting II from this site. I took it to a party and it was gone in no time!

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

Added the butter to the noodles but totally forgot the sour cream. BUT...........this was awesome this way, nobody noticed! I made 1/2 this recipe, but next time I might make the full batch of sauce, just to have more gravy!

No Time to Cook Chicken

This was quite good and I too made some additions and subtractions like some of the others here. I'm mainly reviewing this so I can remember what I did for the next time I cook this. I used cream of celery and cream of mushroom, added sliced onion and chopped one rib of celery since I had it. I also added two carrots, chopped as well. Forgot the sour cream. Added a drained can of fire roasted diced tomatoes with garlic, and added more minced garlic. Added maybe a tsp of oregano, and a liberal amount of black pepper. Shredded the chicken about 2 hours prior to serving, and added a can of cut up white potatoes to it about 1 hour before. Served with Zatarans Yellow Rice. Giving 4 stars due to all my changes, but my version was DELICIOUS.

Orange Soya Sauce Marinated Chicken

Added some orange peel for more pronounced orange flavor, but will try the undiluted orange juice concentrate next time. Added black pepper and grated ginger (needed more!). My oven decided to stop working on the day I did this but my broiler still worked so I broiled these...so juicy! I might never use the actual oven when making this in the future!

Brennan's Irish Soda Bread

I just baked this today and this is very good stuff! I did add an extra TBSP of sugar just because we like a slightly sweeter bread. Dough was very wet, and I only baked this for 35 minutes. I think 30 would have been enough though. This was so easy! I might try adding raisins to this and maybe a touch more sugar next time just for fun and experimenting!

Bread and Celery Stuffing

SO TASTY! I had a lot of bread left over from previous meals so yesterday I just made bread cubes (tossed with a little butter/olive oil) out of them, then today I tried this recipe. I did however cut down the butter to 1/2 cup (due to bread cubes already having some), 3tsp poultry seasoning, and had to add more chicken broth though. I may experiment with this and see if I can reduce the butter content and still have it taste good because WOW there is a lot of butter action in this!

The Ultimate Chocolate Chip Cookie

This is the recipe that came with Butter Flavored Crisco and this is the recipe I've used for years. I don't usually add the nuts though so I just add more chocolate chips. I've tried all different kinds of chocolate chips and also M&M's, and toffee bits. I have found that for me, substituting half of the baking soda for baking powder works the best.

Chicken Enchilada Casserole II

I didn't have enough salsa so I replaced what I didn't have with enchilada sauce, and I used black beans instead of chili beans (couldn't find them) ....worked very well! Hubby really enjoyed this and took the leftovers to work the next day for lunch!

Great Garlic Bread

I just spread some margarine made with olive oil and sprinkled garlic powder and parsley on top, then followed the rest of the directions. Came out very good and I had no extra saucepan/container to clean!

Cornbread Casserole

I used a bigger package of cornbread mix (the honey cornbread mix from KrustEase), and used 1/2 cup of sour cream but that was my only change...YUM! My daughter raved about this and what was left over...she ate by the next day! So easy to put together too. Definitely will see this on the table again soon.

Tartar Sauce I

I wasn't sure just by tasting this after it sat for awhile, since it does not have the 'tartar sauce flavor' I was used to from a jar, but this was EXCELLENT with the Spicy Tuna Fish Cakes recipe from this site.

Spicy Tuna Fish Cakes

I did make some changes based on some of the reviews here and with those changes....DELICIOUS! To the 3 cans of tuna I used (my husband likes to eat haha) I took the dry instant potato flake idea from Lindseye117 which worked great; no added moisture. Used crushed cheese crackers in place of the breadcrumbs, two eggs, minced some fresh onion and celery (didn't want to waste my celery, it was getting old), dried parsley, used OLD BAY seasoning in place of the italian seasoning. Didn't use cayenne pepper because my daughter doesn't like spicy things. Next time I think more OLD BAY is called for, but otherwise these were great! They did not fall apart either. Served them with Tartar Sauce I from this site, cheesy rice, and mixed baby vegetables. This will DEFINITELY make an appearance for dinner again SOON!

Slow Cooker Salisbury Steak

Winner winner beefy dinner! I did find this on the salty side but I'm sure there are ways to cut this down (lower sodium soups, use something else other than the onion soup mix in the meat, etc.) if you are watching your salt intake, but my family said DELICIOUS! The only change I made was to use one can of cream of chicken and one can of cream of mushroom as I only had one can of the cream of chicken. Great this way, so I think I will make it this way from now on! Very easy...get the meat and sauce in the crock pot, set your time and temperature, then walk away until dinner time!

Best Brownies

This was tasty, but the brownies were very thin. I prefer a thicker brownie so I would double the brownie recipe part when making it again. I had a little trouble with the frosting coming together but I added milk a teaspoon at a time until smooth. No need to double the frosting if doubling the brownie.
