Halved the recipe and it made about 16 cupcakes in 20 minutes. Very easy and very delicious light and fluffy cake!

Banana Peanut Butter Bread

Super easy, super good!!! I followed others' suggestion and went with 3/4 cup peanut butter and less flour. I added choc chips and shredded coconut too. I had two fresh bananas, so I zapped those in the microwave for 2 minutes to make them easier to mash. I used muffin tins so only cooked for about 25-30 minutes. I also sprinkled pumpkin seeds on top prior to baking - they worked REALLY well as far as flavor. I shared these with all my neighbors and they've all asked for more!

Bacon, Egg, and Cheese Strata

If you've got kids, try cutting out some fun shapes in the bread and using them as a top layer (hearts, stars, etc...). Also, this recipe seemed pretty bland. Turn three stars into five with a little tweaking :) Salt and pepper, chopped onions and peppers, and a little extra pepper jack cheese sprinkled on top of the final product will turn this slightly bland dish into a real morning waker upper! You can also use diced ham instead of bacon, and if you can't eat pork, then try diced chicken!

Caramel Nougat Bar Peanut Butter Cookies

I've loved this recipe for years. I add a generous dash of ground clove, nutmeg and cin for extra holiday bite in the batter, then I roll the balls in a sugar/cin mixture before baking. Rolo's seem to work the best for a smaller cookie, but you can really use anything. Today I substituted half the flour for almost flour (ground almost - you can make it in a blender or coffee bean grinder). Always a hit!
