Chicken Pot Pie IX

This was an excellent pot pie. The changes I made were: baked the chicken because I don't care for boiled meat, & I steamed the veges for the same reason. I used a potato in it & I substituted asparagus for the peas. I doubled the sauce as well. Very flavorful. Will be making it again soon.

Easy Turkey Tetrazzini

This was a great recipe to use up our T-giving turkey. I sauteed 8 oz fresh mushrooms along with 1/2 of a chopped onion. Kept w/ the 1 cup sour cream & used cream of mushroom soup. Added a little coconut milk & chicken broth, as well. Along w/ the parmesan on top, I put shredded Jack cheese to give it a little zip. Next time I may add some Tabasco to spice it up a little more.

Coconut Jerk Chicken

I was SO excited to make this dish, but ended up being disappointed with the result. It ended up more like a "stew/soup". If I do make it again, I would probably skip adding the cup of tomato juice. This would make it thicker (less watery).

Pasta with Roasted Butternut Squash and Sage

We absolutely loved this recipe. The changes I made were: I tossed the squash & onion in the olive oil before putting in roasting pan. Baked 35 min & squash was still somewhat firm. After I added it to the meat & poured in the heavy cream, I covered the pan & turned to low heat so it could steam while I cooked the pasta. Used bowtie pasta. I never added the pasta to the sauce mix, I just put the mix over the pasta on the plates. It was excellent & made for great leftovers. My husband wants me to make it again this week!!

Autumn Acorn Squash

Made this tonight & we all loved it!! Tasted like autumn. I took advice from other reviews & baked the squash for 15 min & basted the insides w/ butter before I stuffed it. I used risotto, and added 1/2 cup chopped pecans as well as onion and garlic. Also topped w/ parmesan cheese for the last 15 min of baking. Will make this again soon!!

Honey Coconut Salmon

This was very tasty, but I'm glad I read the reviews. I used 1/2 cup butter & 1/3 cup homey. I accidentally bought "sweetened" coconut, so next time I'll use plain to help cut down on some of the sweetness a little more.
