Whole Wheat Pancakes

WOW! these are the pancakes we've been looking for! Nice and thin, but fluffy! Delicious! I substituted the wheat germ for 1/2 c. ground oats (i just ground them in the magic bullet). Also substituted 5 TB canola oil for the butter. I added 2 TB applesauce. I used whole milk & added the juice of one lemon ---YUM! This recipe makes a LOT of pancakes. For the last few pancakes, I added a little bit of orange zest to the batter. again, SO good!

Banana Banana Bread

great recipe. i used 1/2 cup canola oil instead of butter. makes it a bit more moist. also used 1 cup whole wheat flour and 1 cup all-purpose. turned out very well.

Sweet and Spicy Sweet Potatoes

i baked this in a covered casserole dish. i followed the recipe except did not have chili powder, so used 2 pinches of cayenne instead of 1. once the sweet potatoes were cooked, i drizzled maple syrup over the top and topped with mini marshmallows. Then baked for 5 more minutes to melt marshmallows. YUM! a keeper.

Granny's Banana Bread

I used 1/2 c white sugar 1/2 c brown sugar. no applesauce, so I used 1/3 c canola oil. I live at high altitude, so I added 3 Tb vanilla yogurt and 3 Tb Skim Milk. Didn't add the raisins/walnuts. Husband LOVED this recipe. next time i will add chocolate chips, yum!

Raspberry Oat Bars

I baked this in an 8 inch square pan (9 by 13 would be very thin bars) Baked @ 350 for 25 minutes. I built up the crust along the edges to prevent the jam from burning around the sides. The only change I would make next time is using 3/4 tsp salt instead of 1 tsp. It was a little too salty, but DELICIOUS!
