Salmon with Pineapple Tomato Salsa

OMG!!!! Amazing. Loved it! Only thing different I did was BBQ the salmon and omitted the broth. I added some of the juice from the pineapple into the salsa too...yummy! Husband loved it and he normally hates/avoids/refuses to eat pineapple. Thanks!!!

Shrimp and Portobello Mushroom Fettuccine

This was so good! I made some changes, not due to previous reviews, but because of what I had on hand. I sauteed the onions and garlic with a yellow pepper and some regular mushrooms. I only used half of the butter, and used some white wine while sauteeing. I also used 3 oz of dill flavoured cream cheese - again, it was what I had on hand. I personally don't think it made a difference in flavour. I made the sauce as directed, except I used half and half, and thank goodness because I think whipping cream would've been WAY too thick. I added a bit extra parm, but thats more for personal preference. I didn't have 2lbs of shrimp, which was why I added the yellow pepper, to compensate for the loss of the shrimp. I put those all together once the sauce was thickened. I topped with fresh tomatoes, and a homemade basil pesto which was YUMMY. Will totally be making this again!

Navy Bean Soup I

OMG- this soup is amazing! I made this mostly for my hubby as I didn't think I would like it at all....well, was I ever wrong! This is quite easily one of the best soups I have ever made! I had made a ham and made broth from the bone instead of using water as the recipe called for. I didn't have any canned tomatoes, so I used fresh. It was done in 3.5 hours instead of 4. Eating some right now - amazing!

Made with a bunch of stuff in my cupboards (cheerios, gold fish crackers, pretzels, shreddies, etc.). Kept the sauce as written. Tasty and crunchy! Love it and will definitely be making again.

Kim's Eggnog Cheesecake

OH....MY....GAWD!!!!! This was amazing! I used ginger snap cookies (recipe found on this site) for the crust and added some nutmeg and cinnamon to it. I also used homemade eggnog (amazingly good egg nog recipe from this site) but followed the recipe exactly otherwise. For a topping, I whipped up some whipping cream with a touch of egg nog and cinnamon to give it some extra flavour. Topped with Baileys Irish Cream and some raspberries. I don't even want to know how many calories were in this, but it was quite possibly the absolute best cheesecake that I have ever eaten. SO creamy. My cheesecake did crack, but I haven't perfected that yet....it'll come with time. I can't even begin to describe how absolutely fantastic this was.

Amazingly Good Eggnog

I hate store bought egg nog....always have and always will. I was hesitant to make some, but my husband loves egg nog and I thought I would make some for him as a nice treat. OMG!! This stuff is AMAZING! I made it exactly as described, with the exception of tempering the eggs in a portion of the hot milk first. So easy to make. I let it sit for 24 hours before serving, and wowsers...great stuff! We had company for dinner, and they couldn't get enough of it. I now get asked to make it all the time. Calorie content may be higher, but so worth it over the holidays!

This was ok....for some reason, the pepper just seemed overwhelming to me. We don't usually cook with lots of pepper, so maybe that's why I found it overwhelming. Had the pepper been reduced, I may have enjoyed it more.

Spaghetti Squash I

This was very good....the squash didn't cook at all in the oven, so after the 30 minutes, I popped it into the microwave for 5 minutes and it was cooked....the 30 minutes was hardly enough. I took some advice of others and added some fresh spinach to the mix with the tomatoes. I also had some leftover grilled chicken that I chopped up and added as well. I omitted the olives (personal preference), and I used olive oil instead of vegetable oil. I also added some red pepper and sauteed those with the onions. Will definitely make again...Yummy!

Banana Banana Bread

This is amazing! I absolutely love it and haven't been able to enjoy any other banana loaf since. I took the advice of others and added some cinnamon, nutmeg, allspice and a dash of vanilla. I creamed the butter and sugar together, added to eggs, then mixed in the rest with a wooden spoon as to not overmix. I baked these in some french onion soup bowls, divided into 4, cooking about 1hr 10 min. My company loved them. Will definitely make again!
