Baked Pancakes with Sausages

Very good recipe. I used butter, increased the sugar to 2 tablespooons, and added a capful and a half of vanilla. I cooked sage sausage and crumbled it over one half of batter in the pan and put thinly sliced granny smith apple over the other half. I forgot to melt the shortening--it was softened--but it still came out OK. I will be trying this again. Next time I won't forget that step! My ten year old and five year old were asking for seconds!

Sweet Potato Pie I

This is a very good recipe. I benefitted from comments that other reviewers made. I used about 4 small to medium potatoes, halved the potatoes and boiled them. I didn't have nutmeg so I used a dash of allspice instead. In addition to the vanilla I added ½ tsp of lemon extract. (Next time I'll try a teaspoon.) I used ½ brown sugar and ½ white sugar and added 2 Tbs flour to thicken. I baked it in a ceramic tart pan using a homemade pie crust.

Chicken Pot Pie IX

This was delicious! I used baby carrots that I had on hand and quartered them. I ddin't have celery, but I did have celery seed on hand. I was already baking chicken that evening and used the cooked chicken in place of cooking the chicken breast. I boiled the carrots and a cubed potato for 15 minutes and then pretty much followed the rest of the recipe. I used a homemade buttery pie crust recipe that I think I got from this site. I brushed the bottom crust with egg white and put in the oven for 5 minutes. (I used a cake pan, since I did not have a deep dish pie pan.) I also added the cooked carrots, potatoes, and a cup of canned peas to the milk mixture (adjusted the liquid as needed), and then poured it into the pre-baked bottom. I put on the top crust and also brushed that with egg white and it came out beautiully browned. I will definitely make this again.

Tender Potato Biscuits

These biscuits were excellent - soft and tender, inside just as the name implies. The recipe made 10 good sized biscuits
