Fabulous Fajitas

I have been making these for years, I love this recipe. I use 2 green bell peppers and I sometimes use strips of sirloin (1½ lbs) instead of chicken. I use a whole carton of sliced fresh mushrooms and for extra flavor, I sometimes add a packet of fajita seasoning as well. Toppings: shredded cheese, diced tomatoes, sliced black olives and sour cream. This is quick, easy and there's just one pan to wash! Use precooked chicken for super easy.

Pineapple Lemon Cheese Pie

I have been looking for this recipe for ages! My mother made it when I was growing up. There was one difference; she made her own graham cracker crust and put the dessert in a square pan instead of a pie plate. Then it was cut into squares for serving. This stuff is delicious! It's satisfying and not too heavy. It's always been my favorite dessert. I highly recommend this recipe.

Mac and Cheese II

This basic recipe is creamy, cheesy and rich. However it needs seasoning. I found it to be much better when I added dry mustard, a dash of Tabasco sauce, onion powder, and salt and pepper. Also, I topped it with buttered bread crumbs. I used shredded Velveeta for a creamy texture.

Easy Chicken Marsala

This is a wonderful recipe! It's almost exactly like the Chicken Marsala at my favorite restaurant. I make this when I want a delicious, elegant meal and serve it with wild rice and a nice bottle of wine. I always triple the sauce, which is easily done using an 8 oz carton of cream and 1 cup of marsala wine, leaving out the milk. Also, I use double the mushrooms and I use sweet onions instead of green. I simmer it longer till the sauce reduces and thickens to my liking. The cream is the key in this recipe, I can't imagine a chicken marsala recipe without cream in the sauce. I love to make this for guests, it gets raves and I look like a gourmet cook!

Irish Chicken and Dumplings

This has become one of my favorite recipes. It's not difficult to make and is so good. After making it the first time, I have made it many times and it is a permanent part of my recipe box. Very hearty, tasty and satisfying. Hint: The dumpling recipe is way too big. I cut it in half or use my own recipe for butter dumplings.
