Valerie's Fruit Dip

Second time's a charm! The first time, I mixed everything together at once, per the instructions and although it tasted great, the dip had tons of tiny cream cheese chunks, which I didn't like. The second time, I followed the reviewers who said to cream the cream cheese first, add milk slowly and go from there. I took it one step further, and found it to be perfect. Here's what I did in order. First, mix room temperature cream cheese until creamy. Then slowly add the milk, also warmed to room temperature so the shock of cold doesn't make the cream cheese start to solidify again. I then added half of the thawed whipped topping and vanilla pudding. Followed by the confectioner's sugar and remaining whipped topping, all the while, being stirred on low to medium setting in the Kitchenaide. Voila! Perfect, creamy vanilla dip that's good enough to eat with a spoon.

Peanut Butter Bars VI

Holy Wow! Fantastic! I used Special K because that's what I had on hand and spread in an 11x7 Pyrex dish, which I think was the perfect size. I also pressed done chocolate chips into the top before refrigerating. YUMMY!

Aussie Chicken

BBQ-Glazed Mini Meatloaves

This recipe was pretty good for an easy weeknight meal. I didn't bother with the brown sugar, as the barbecue sauce was sweet enough on its own. Also, baking them in muffin cups, brilliant. I used 80/20 ground beef, had no problem getting them out, and was able to leave the bulk of the grease behind. Will make again.

Italian Turkey Meatballs

Emily's Broccoli Cheese Soup

This was delicious! I didn't cook any of the vegetables ahead of time, just threw it all into the crockpot. I also used Velveeta instead of shredded cheddar because I find that processed cheese makes for a smoother consistency. The key to this recipe though is the Montreal Steak seasoning, which gives it a surprising and pleasing kick.

This was delicious. Mine really cracked, but that didn't affect the taste. Next time I'll try to mix it less per other reviewers. Anyway, we just trimmed the top part off and covered with fresh, sliced strawberries, which made it look gourmet.

Latin-Inspired Spicy Cream Chicken Stew

I love this recipe. Super easy to make and delicious! The only thing I do differently is use a whole 8 oz. block of cream cheese, and sometimes I'll add some chicken broth if we're in the mood for a thinner, less chowder-like soup.

Slow Cooker Buffalo Chicken Wing Soup

Delicious! Like buffalo chicken dip in soup form. I did make a few modifications due to preference. I put 4 whole boneless/skinless chicken breasts in crock, so by the end if cooking time (8 hours on low), it was easily shredded. I also left out the potatoes, used 4 cups of half and half, with 2 cups of chicken broth to make a slightly thinner soup. I also used a mild wing sauce so my son could eat it, therefore I ended up doubling that to about 2 cups, or the whole bottle. Finally, per other reviewers, I left the blue cheese crumbles on the side so everyone could take as much or as little as they wanted. Fantastic!!!

Chocolate Chip Pie I

I've made this a few times and it's always a hit. I have found that if I decrease the butter by 1/4 cup and increase the flour by a 1/4 cup, that I get a more cookie-like pie, that isn't so heavy and too rich. By doing this, all the chips don't sink to the bottom either. I also do as others have suggested and drop some chocolate chips on top with about 20 minutes left to cook. Finally, I use a 9" graham cracker crust because that's what we prefer.
