Easy Mint Chocolate Chip Ice Cream

The texture and flavor was excellent, however I'm giving it 4 stars because it wasn't nearly minty enough. I had used SANDRA_FRANCKS suggestion to use min instead of peppermint extract. Next time, I'll do the same, but double the amount of extract.

Delicious Ham and Potato Soup

LOVE THIS SOUP! The amount of pepper makes it rather spicy, which is another reason for me to love it, but whenever I make it for guests, I use only 25%-50% the amount called for, depending on how 'tame' my guests are in regards to spicy foods.

Jamaican Spinach Soup

Excellent flavor, and VERY forgiving... I made so many modifications to accommodate the ingredients I had on hand. - 2 onions instead of 1 - No celery - minced and jarred versions of the ginger and the garlic rather than fresh - ordinary sugar and salt - 2 yams instead of potatoes - low sodium chicken stock instead of vegetable - 4 dashes of cayenne powder (gave it a nice yet still subtle kick!) - doubled the spinach - nixed the bell pepper And I just diced everything up into bite-size pieces and skipped the blender step. It turned out both aesthetic and delicious!

Tres Leches III

I took another reviewer's suggestion to cut back by one egg, but I still had issues with baking time and milk absorption. I had to leave it in the oven for about an hour! By that point, the top had become a very dark brown and had to be cut off so that the cake would actually absorb the milk mixture. I only used about half the milk mixture before it stopped absorbing, but the cake wasn't as moist as it should be. I think next time, I'll try to solve this surface area limitation issue by halving the recipe entirely, still cooking it in a 9x13 pan, so that it may actually finish cooking at the 25 minute mark and absorb more of the milk mixture.
