The Kiddos
About this Cook
I am a single mother to 2 beautiful, fun, loving children, and I have an incredible boyfriend that tolerates me every day! I love him for that! I love love love to cook, but sometimes between my full time job and the kiddos it can be crunch time. Cooking is my free therapy!
My favorite things to cook
I love to throw anything on the grill outside any time of year! Lasagna is a family favorite, along with anything that has to do with desert.
My favorite family cooking traditions
The kids and I always roast pumpkin seeds close to Halloween, rolled sugar cookie cut-outs for the holidays, and sweet sun tea is a must during the summer.
My cooking triumphs
Thanksgiving dinner for my large family back in 2008. My mother usually does this, but she was ill, so I took the wheel and went with it. Secretly, I received alot of compliments on how much better mine was! =)
My cooking tragedies
For my boyfriend's birthday this month, I attempted to make a double layer lemon cake, with buttercream frosting, all from scratch. When I got done with it, it looked like pretty pathetic. My mother is the cake decorator in the family! He still ate it, bless his little heart!

Spinach Enchiladas Verde
Kudos! Great quick weeknight recipe. I just added some pre-grilled chicken to the filling and the kids and BF loved it! Thank you for the recipe! I found putting a few corn tortillas between paper towels and nuking them in the microwave for about 20 seconds helped keep them intact to roll them up.
