Deer Chop Hurry

Reviewed: Jan. 12, 2011
This was excellent and didn't taste gamey at all. I browned on stove although I don't think that I would have needed to (my deer chops were butterflied by the way). I then put all the rest of the ingredients on top of the chops that were in a cast iron skillet and covered with aluminum foil and baked in oven a little over an hour, maybe an hour, ten minutes. Could have gone even slightly longer.

Pumpkin Pie Squares

Reviewed: Nov. 28, 2010
Based on others reviews, I too modified slightly. For the crust portion, I used slightly more than 1/2 cup of oatmeal - there was plenty for a crust in the 13 x 9 glass pan that I used. I also added more pumpkin and an additional egg for binding and increased spices accordingly. It was great!

Chicken Noodle Soup

Reviewed: May 10, 2010
Couldn't be better! My husband made this for me after I had been sick and this tasted great. The seasoning was perfect for us. We did delete the bay leaf.

Jen's Hamburger Soup

Reviewed: Mar. 1, 2010
Just made this. My husband did not like the amount of carrots in the soup - I would have to agree - use less. Otherwise it was good. Especially loved the squash (I had some left over that was not used in another recipe) - it really added a good flavor. All in all, an excellent soup - don't think there will be a lot of liquid to this soup.

Simple Sloppy Joes

Reviewed: May 23, 2009
This was a great recipe. Only change I made was adding 1/2 green pepper chopped with onion and garlic. The soy sauce really worked in this recipe. Thanks.

Pineapple Upside-Down Cake II

Reviewed: Mar. 1, 2009
I too found the topping soggy but it did not detract from the wonderful taste. I have never made a pineapple cake with it made in chunks but it was good.

Rocks

Reviewed: Feb. 22, 2009
These cookies ROCK! I am not always the biggest fan of spice-type cookies or raisins but these came out great and were very flavorful. I had to put some in the freezer so that we would not eat them all right away.

Eve's Chicken Quarters

Reviewed: Feb. 17, 2008
Had to make some changes to the recipe due to my celiac disease. It is hard to find the wild rice boxed mixes and condensed soups that are gluten free so I made the following modifications: I used Uncle Ben's long grain and wild rice that was already made and is in the same section of the grocery store that the mixes are and is in a plastic pouch, for the soup I used a gluten-free mix for cream soups (a combination of pwd. milk, rice flour, minced onion, and dry chicken base) and then followed the instructions to reconstitute it. Due to others stating there was too much liquid in, I added a can of drained mushrooms to make more bulk. Excellent.

Oriental Rice

Reviewed: Dec. 4, 2007
I changed the way to prepare it - sauteed the onions, green pepper and celery because I wasn't sure that they would be done enough (i.e. not crunchy) in a sm. amount of oil before I added the ground beef and when that was brown then added all the rest of the ingredients. Overall a very good recipe.

Pecan Rice

Reviewed: Mar. 31, 2007
Excellent! Did not use the ginger (I couldn't find it!) and it was fine without it. The nuts definitely add something. I'll be making this again.

Tomato Pork Chops I

Reviewed: Feb. 17, 2007
really enjoyed this recipe - did make the following changes as others suggested - added minced garlic along with the peppers and onions, also added cilantro and sugar as suggested and served over mashed potatoes. Only cooked pork chops about 20 minutes instead of the 30 minutes suggested and they were very tender. Excellent!

Mexican Medley

Looking at the recipe ingredients, it didn't look like things that should go together well, however it all comes together very well. Excellent taste, great use of vegetables.

Pancho Villa Baked Tilapia

Reviewed: Oct. 12, 2004
I did this slightly different - I put all fillets on a large piece of foil, spooned the diced tomatoes over the top, drizzled with lime juice and placed lime slices on top of that. I didn't have cilantro so I used dried parsley and sealed with foil over the top. I also baked it slightly longer, maybe 25-30 minutes. It was served with rice and a vegetable. Excellent dish if you are trying to lose weight but don't want to feel still hungry at the end of a meal.

Best Macaroni Salad

My husband who is not a big pasta salad lover thought this salad was great. I mixed vinegar and olive oil in with mayonnaise and it did not taste oily like one of the reviewers mentioned,

Mexicali Pork Chops

Reviewed: Jan. 17, 2004
I prepared this dish slightly differently. I used a cast iron skillet - browned the chops first using cayenne pepper and Paul Prudhomme's Meat Magic for seasoning. I removed the pork chops and kept them warm while I sauteed the vegetables and added the corn and tomatoes as directed. I then put pork chops back on top, added a glass cover and popped it in the oven for approx. 25 minutes. Saved on clean-up that way. It came out very well - we served as is (without rice) and had corn bread to go with it. A complete meal!

Cornish Game Hens with Rice Stuffing

Reviewed: Jan. 5, 2004
Very good taste - only suggestion is to decrease the amount of melted butter for basting - 1/4 cup seemed a bit much more than is needed. I also had to cook the rice mixture a bit longer than was suggested before the liquid was absorbed.

I didn't use fresh mint leaves because I didn't have any but did use dried mint. We liked this recipe.

Sweet and Sour Pork III

I loved this. The cornstarch coating made the pork crispy which I thought made the recipe what it is. I will make this one again.

Roast Chicken with Potato, Olives and Greek Seasoning

Reviewed: Oct. 4, 2003
Excellent! I agree that it tastes as good left-over as the first night! I was able to find the correct seasoning - thought it sounded like a large amount being used but turned out great.
