Claremont Salad

excellent, used 10 oz bag presliced cabbage, 2 cukes and 2.5 carrots and 3/4 large onion with 1 teaspoon celery seed and only 1 teaspoon of salt. Couldn't wait for it to marinate, had it the first day then for the rest of the week.

Green Bean and Mushroom Medley

Rave reviews from household... used less salt and didn't use carrots. Also used some garlic scapes in about the same length as the green beans (cooked exactly the same way) and everyone thought it was great.

Chicken Cordon Bleu I

Made with Aussie Chicken Sauce and it was delightful. My husband scraped the plate and wished for more. Used Chicken Cutlets from grocery store and deli ham and shredded swiss. Perfect and easy.

Catfish Etouffee

Artichoke Cheese Dip

I've used this recipe for years and it always pleases. I generally double the cheese using 2 whole blocks of cheese and one jar of artichokes (any size). You can totally microwave it too (it never lasts long enough to get rubbery). Perfect with bread or a spoon. The onion is optional and we rarely use it. As for oily problems, it's rarely an issue. I probably use slightly less than half a cup (more often it's just 2 large spoonfuls). No tangy taste as we always use real Hellman's (no low-fat or miracle whip in my house).

Steak Salad

Great dressing! We used some leftover round steak cut really thin (seasoned with liquid smoke and grilled on the bbq), a bag of (field greens) salad, some tomatoes, onion, and cucumbers as well as bleu cheese to taste. My husband couldn't get enough of the dressing and used the remainder as a bread dip. Serve this salad with bread and you've got a clean plate! Also used Vegetable oil since I was out of Olive Oil (sob) and it was great!

Joy's Prizewinning Trifle

I'd give this 4.5 stars and 5 stars to all the reviews that mention putting the bananas in the pineapple juice and the cheesecake pudding mix idea was perfect! Next time, I'll try it with pineapple chunks since we tried the crushed and it was barely tasted. Next time we'll omit the kiwi and use more strawberries as my husband doesn't particularly like kiwi.

Easy Ham and Noodles

Pretty good, I used cream of broccoli soup and added some frozen broccoli instead of peas.. came out great, next time I'll have a second can of a cream soup on hand since I added more ham and noodles to the recipe it became sort of dried out. Definately wouldn't make with a salty ham tho! (Our ham was very sweet and not so salty this time!)
