Peach Cobbler Dump Cake I

Yum! Used fresh peaches and thinly sliced apple because I didn't have canned - cooked for 10 min in simple syrup (1/2sugar 1/2water), then I let them sit in it for awhile. Drained and topped with mix, slices of butter, a little brown sugar and cinnamon. Some parts were deliciously crispy. Served with vanilla ice cream. Exactly what I needed tonight!

To Die For Blueberry Muffins

I was scared when I put my pan in the oven and realized that I had completely forgotten the oil! I am an avid baker, but I was distracted. With low expectations I waited and was so happy to see them looking beautiful in the oven. And, the taste - they were perfect to me. The batter wasn't good and I've always heard that if your batter doesn't taste good, your product won't - maybe the topping saved it. Anyway, I'm excited because my kids and I enjoy the muffins and were able to reduce fat/calories. I used whole wheat pastry flour, which cooks up perfectly - better than regular ww flour if you were a die hard white flour user and don't want to change taste/texture. Also increased blueberries. The streusel topping needs work in my opinion - unless I didn't work it right. Tasty, but less crumbly and more like a melted mixture. Enjoy!

Simple Scones

Delicious. I brought them to a MOPS group and each woman said they were the best scones ever - "so moist" and "not dry." One girl looked up the recipe immediately. I added chocolate chips and 1 tsp vanilla. I also didn't have sour cream so I used plain yogurt like other people suggested. I also melted the butter like I read others did - too busy to great/crumble in. The result was the scone I was looking for in 5 minutes of prep time.

Easy Lemon Cookies

These were exactly what I was looking for! They were moist, delicious, beautiful and they had that perfect lemon flavor I was looking for. I had just tried difficult recipes for lemon shortbread cookies and a labor intensive lemon cake to give as gifts, but I'm sold on these after going down the more difficult road. Not only did they taste better, but they are SO easy! I'll confess that I didn't have the lemon extract so I did substitute 1/2 tsp of lemon oil (I had from the other recipes) and 1/2 tsp freshly squeezed lemon.

Chocolate Mint Dessert Brownies

Very good mint mixture (tastes like peppermint patty filling!). I used box brownie mixture because I didn't feel like making homemade. I also used peppermint extract because I didn't have the creme de menthe. Use sparingly - you can always add more! I think I started with just under a T and that was plenty. To get the mixture to a good consistency, I just supplemented with a little water. My brownies only made an 8x8 - don't use all of your toppings if this is your case, otherwise it is too thick and too rich - I learned. I also think a cake-like brownie, as opposed to fudge-like, would have been better, because the topping is gooey enough. I will definitely make again! You can color the mixture red for Christmas!

Costas French Market Doughnuts (Beignets)

4.5 rating. My 4 young kids gobbled them up. I sprinkled them with cinnamon/powdered sugar mixture and served them hot. I thought they were good, but feel the dough is lacking in a little flavor. Better to start lower/medium with oil temperature and work up - you'll have plenty of dough to experiment with. My first one got super brown right away, then had a gooey inside.

Chicken Enchilada Slow Cooker Soup

Great base recipe! Based on other reviews, I added Rotel tomatoes in addition to the diced tomatoes (too spicy for kids), leftover rice, black olives and some canned beans. Topped with colby cheese and tortilla strips. Delicious and hearty!

Ham and Potatoes Au Gratin

A great base recipe. My husband asked that I save this and he doesn't do this too often. (meat and potato guy). I didn't have fresh onion so I used some onion powder and garlic powder which was great - I think it needs that added flavor! I used a mexican blend cheese and added some more after baking so my children could see it. I also parboiled potatoes in salted water so the process would move along faster in the oven. Highly recommended! Even with this step, it took me 30 mins or so in the oven. I used leftover ham from Easter and it tasted delicious - even better the next day.

Slow Cooker Italian Beef for Sandwiches

Made my husband very happy! I followed the recipe exactly, all the way down to the rump roast which shredded beautifully after enough cooking time. At the end, I did opt for the extra package of Italian seasoning which was great! I toasted an Italian-style hoagie roll in broiler with sliced mozzarella and topped with meat and banana peppers. Thanks - will be a great go-to recipe for my family of 5 boys!
