Tomato and Basil Quiche

This is quite good. I only made a couple of changes based on previous reviews. I chopped the onions very fine and caramelized them. I replaced the milk w/ heavy cream. I used a full package of cheese (2 cups). Instead of frying the tomatoes, I lightly salted them and let them set on paper towel for approximately 20 minutes to remove the water before adding to the quiche. Very good for breakfast or would be excellent for a light lunch as well.

Easy Devonshire Cream

Super easy! I added a little more sugar and just a bit of vanilla extract, so I didn't have that cream cheese 'tang' taste at all! Wonderful substitute for the real stuff!!

Blueberry Cream Muffins

Excellent! A couple of changes I made...I used 1 cup of white sugar and 1 cup of brown sugar instead of 2 cups of white and to that I added an extra 1/2 cup of sugar (I used 1/4 brown sugar and 1/4 white sugar to make that extra 1/2 cup), I added 1 tbls. of lemon juice (next time I will either add more lemon juice or add some lemon zest), I used 2 cups of wheat flour and 2 cups of white flour instead of 4 cups of white, and topped off the muffins with a strudel topping that another person recommend in their review. Great use for fresh blueberries!!!

Chicken and Red Wine Sauce

Excellent! I followed a few others suggestions and made the following changes. I sauteed onion w/ the garlic. I sprinkled the paprika on the chicken w/ salt and pepper while browning. I reduced the amount of wine and sugar by half and added a 1/2 c. chicken broth. The next time I make it, though, I will reduce the sugar even further...probably down to a 1/4 c. I also added a can of mushrooms. Also...I think I will double the sauce next time. I served this over pasta (think I will try mashed potatoes next time), buttered Rosemary rolls, and a salad. Hubby said you couldn't get a better meal in a restaurant.

Spicy Bean Salsa

I am giving 4 stars just because I made a few changes. I used 1 can each of black-eyed peas, black beans, and hominy, 1 pkg. frozen super sweet corn (slightly thawed), 2 avocados (chopped), 2 tomatoes (chopped), 3-4 cloves fresh garlic (minced), about 1/4 c. cilantro, and 3-4 green onions (chopped, including tops). I tossed all of this with fresh lime juice (about 2 limes), some kosher salt to taste, and about 3 tablespoons of veg. oil. So addictive!

American Shepherd's Pie

I gave it 4 stars just because I made a few changes. I doubled the recipe, used cream of mushroom and cream of chicken soups. I also added Worcestershire sauce, parsley, and garlic powder. Instead of celery, I used a can of corn. I also increased the amount of thyme. This is a good basic recipe and w/ the changes, I'd give it 5 stars.

Chocolate Frosting II

This was good and easy. I didn't heat it on the stove. I took another reviewer's suggestions and just let my butter get soft and then mixed everything together. I reduced the sugar to 3 cups and increased the cocoa to 1/3 cup. When I make again, I will increase cocoa to 1/2 cup.

Sandy's Chocolate Cake

Excellent recipe! I reduced the serving size to 9 servings. I was able to bake in in 9x13 dish (about 35 minutes). Used a different frosting recipe from this website. Cake was still very moist the next day.

Swedish Meatballs I

Creamy Macaroni and Cheese

I needed a stove top mac & cheese recipe and this was excellent. A couple of changes I made...left out the mustard (personal preference) and used skim milk in place of evaporated (didn't have any on hand). I stirred constantly and it took about 10 minutes for sauce to thicken. Also...I used a combination of sharp cheddar, colby, and mont.jack cheeses. Kids loved it.

Outback Onion Soup

I wouldn't say this is exactly like Outback, but it's a wonderful soup nonetheless. I did skip the whole flour business and thicken w/ cornstarch instead. I also think the next time I make it, I will try adding a little wine to it and see if it gives it a more Outback flavor. Very rich and wonderful.

Zucchini Patties

Oh, my. These are so good. After reading some reviews I added some seasoned italian bread crumbs, 3 eggs instead of 2, garlic, red pepper flakes, and about 1/4-1/2 c. instant mashed potato flakes. Decreased flour to 1/4 c. Also added some cheddar cheese (along w/ the other cheeses). Excellent!

Pork Chops with Sour Cream and Mushroom Sauce

I am giving it a 4, just because I made several adjustments. I sauteed pork tenderloin in mushrooms and onions seasoned w/ salt, pepper, garlic powder, and about a teaspoon of Italian seasoning. Mixed the sour cream & mushroom soups as directed, and let simmer for about 20 min. until meat was tendered. I also added just a dash of Italian seasoning to sour cream mixture as well. Served over egg noodles. Was very good and will make again.

Sauerkraut Meatball Soup

This was okay. It was an interesting change of pace. I did add dumplings like suggested in a previous post and thought they were quite good w/ it. The problems I found is-1)It makes a LARGE pot of soup. The original recipe says it will serve 8, but really it's more like 16. If I were to make it again, I'd cut the recipe in half. 2)Unless your kids REALLY like sauerkraut, they won't like this. The flavor is quite strong.
