Mini Pumpkin Butterscotch Muffins

These were wonderful!! I didn't have the exact measurements of spices as called for in the recipe, i.e. I had no ginger so I did 1 1/2 tsp cinnamon, 1/2 tsp nutmeg and about 1/2 tsp all spice and they had really good flavor. The butterscotch flavoring is great! I wouldn't have thought to put the two together but these were definitely a hit with the family!

White Bean Chicken Chili

I have made this recipe several times, and I do not use tomatillos or coriander. The first time I made it I didn't have these ingredients, and left them out--was delicious without. Also, I just use the Rotel tomatoes witht the green chiles in them and a couple cans of diced tomatoes. This soup is so wonderful, and it is even better the next day. I usually crush up tortillas and add shredded cheddar when serving--to die for!!

Pie Crust I

I had the hardest time rolling out this crust. I used 7 tbsp of water, as it was very stiff with 6. It kept tearing, and the edges frayed, and I ended up piecing it together best I could. Not the most user-friendly pie crust I've ever tried. However, I used butter flavor Crisco and the flavor was excellent and very flaky.

Pumpkin Pancakes

I have made this recipe several times, and it comes out awesome every time! I add a little more cinnamon, like 2 tsp instead of the 1. I have looked all over for a pumpkin pancake recipe and this one does the trick! My 4 kids ask for these all the time...they are moist and flavorful. Definitely worth a try!

Chicken Pot Pie IX

I have tried other Chicken Pot Pies, and this by far was the BEST! I followed the recipe to a T, and it came out great the first time. My whole family loved it! I use the roll-out Pillsbury pie crusts, and brush the top one w/a little egg white and comes out looking and tasting great!
