Lemon Blueberry Bread

Reviewed: Nov. 8, 2012
This turned out to be one of my favorite breads I've ever made! It's super simple and doesn't require a ton of ingredients. I had to use oranges instead of lemons because that's the only citrus I had on hand. I also made this using brown rice flour instead of all purpose (because it's gluten free), I used coconut oil instead of butter (adds more flavor and is much healthier), and had to use hemp milk (you could use any other non-dairy milk as well). It still turned out to be amazing, thank you again!

Guacamole

Reviewed: May 2, 2010
This guacamole really is AMAZING! Do not change anything about it. It is fresh, light, and so clean tasting. The lime juice in it not only tastes great but keeps the guacamole from browning. I think it tastes best eaten the day you make it, but still awesome after sitting in the fridge all night.

Egg-White Crepes

Reviewed: Feb. 15, 2010
These are AMAZING! You can eat them for breakfast, or as a late night, GUILT FREE, dessert! I do everything the exact same, except when you flip the crepe over and put the berries inside, put some nutella in there as well and follow the rest of the recipe, SO GOOD. The nutella is healthy, and goes excellent with the berries, the crepe, everything. So so so so so good!

Lime Chicken Soft Tacos

Reviewed: Dec. 15, 2009
These tacos are really great! I use a whole wheat tortilla and it really makes for an amazing healthy meal. Also, as someone else suggested, I threw everything in the crockpot for a couple hours and it was absolutely perfect. I also added one more lime, these tacos are fabulous.

Easy OREO Truffles

Reviewed: Dec. 15, 2009
I have been making these for a couple years now and they are a hit with EVERYONE you will meet. So so good! I also add a tablespoon of shortening to the chocolate chips and melt it in there to thicken it up, if you don't have shortening laying around then follow the exact recipe with no worries.

Chocolate Pecan Pie III

Reviewed: Dec. 10, 2009
Seriously, THE BEST PECAN PIE EVER! Soooo good, and I followed the advice on how to keep the eggs from scrambling. SO SO SO SO SO GOOD! I chilled over night and it was a total hit, I will be making it again for Christmas. My only advice is making more than one of these because trust me, it will go fast!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Nov. 18, 2009
LISTEN TO THE MODIFICATIONS EVERYONE IS SAYING TO DO! I have made these cookies multiple times but they came out as the biggest hit when I increased the flour by 1/2 cup, the baking soda by 1/2 tablespoon, cut the salt to 1/2 tsp, and instead of 1 cup of chocolate chips I just added the entire bag. They were simply PERFECT and have never had such a good response to them from family and friends as this modified version. Excellent!
