Root Beer Cookies
I made these cookies to take to my weekly bowling league and didn't want to frost them as that makes them more difficult to pack to travel, so I added another 1 1/2 teaspoons root beer extract to the batter (that would have gone into the glaze) and added a package of white chocolate chips. YUM!! They tasted like a root beer float! Everyone went crazy over them!!!!!!

Peanut Mallow Bars
Love this recipe, but with the 1st batch I found it is VERY difficult to spread the peanut butter chip mixture over the marshmallow layer! With the 2nd batch, I combined the peanuts and cereal in a bowl and spread that over the marshmallow layer then melted the peanut butter chips, butter and corn syrup, removed from heat, stirred in vanilla and carefully drizzled that over the nut/cereal layer. MUCH easier and they still taste great!

Seven Layer Bars
This is a very easy recipe. Based on other reviews I read, I modified it slightly. I used 3/4 c. unsalted butter and 2 c. graham cracker crumbs, mixed them in a bowl then pressed them into my baking dish I had sprayed with Pam. Then I added the coconut (so it doesn't dry out or burn), walnuts, chips and then poured the condensed milk over everything. They came out great! Made 2 batches, one with chocolate and butterscotch chips and one with chocolate and peanut butter chips. Yum!!
