Key Lime Pie VII

I made this for the first time last night and I 'm so glad I did. I had Mexican limes that came in my weekly food basket, so I used those and made a pretzel crust using coconut oil instead of butter. The crust complimented the creamy filling perfectly. This is my new 'go to' recipe for key lime pie. Definitely a keeper!

Key Lime and Pretzel Pie

Made this for the first time last night and I'm so glad I did! All the reviews were correct and I have my new 'go to' recipe for key lime pie. I made a pretzel crust using coconut oil instead of butter (thanks to another reviewer) and it compliments the filling perfectly. I had gotten a bunch of Mexican limes in my weekly food basket, so I just used those. This is a keeper!

Banana Oatmeal Crumb Cake

This is a really good coffee cake! We are trying to cut back on our sugar intake, so for the cake, I used 1/3c brown sugar and 1/3c Stevia and for the topping, I cut the brown sugar to a little less than 1/4c and added 2tsp cinnamon and 1/4tsp nutmeg. Everyone loved it. I will be making this again.

Apple Coffee Cake

I made this for breakfast this morning and it was really, really good. We have been trying to cut back on our sugar intake, and I should've cut the brown sugar down in this recipe. It was really sweet - so sweet that next time I will HALF the brown sugar in the batter. I will be making this again!

Quick Yeast Rolls

These were easy and oh, so good! I added the yeast to the sugar & warm water to let it bloom before adding it to the other ingredients, then I used my KitchenAid mixer with the dough hook and set it on medium for 5 minutes. I just left it in the bowl & covered it for 30 min to rise. It was very sticky, as others said, but I just spooned it into the muffin tin & let it rise another 15 min. I will definitely be making these again and again!

Butternut Squash Soup II

Truthfully, I had never cooked with butter nut squash before, so I wasn't ever sure we would like it. I didn't have any celery, but was also roasting fresh asparagus, so I just threw those stems in instead. I use my immersion blender to purée it all & it was really pretty good,

Sweet, Sticky and Spicy Chicken

This sauce is excellent! I took the advice of others and doubled the amount & it was probably my best attempt at homemade sauce. I dredged my chicken in a mixture of flour, corn starch, & a pinch of Chinese 5-spice and cooked till crispy. I threw red & yellow pepper and broccoli on top and covered it long enough to steam the veggies before stirring in the sauce. Wonderful & easy.... What's not to love?

Green Bean Almondine with Garlic and Blue Cheese

I rarely use fresh green beans because they always just seem to taste 'green' to me, but this recipe worked great. Everyone really liked them. I did take the advice of some others & sautéed some red onion with the almonds. I will use this again & again.

Grandma Johnson's Scones

I'm not a huge fan of scones and neither is my hubby, but this recipe was so highly rated, I decided to give it a try. Guess what!?! Now we are fans! These are really good. Not dry like so many. I took others advice and added orange extract, orange zest, and dried cranberries and they were very good. I will definitely continue to make these.

Broiled Asparagus Parmesan

Flourless Peanut Butter Cookies

These are really easy and really good! The recipe didn't say anything about flattening the cookies, and I think I will next time- they are a bit under cooked in the middle. I did use 1/2 sugar and 1/2 Splenda to cut down on the sugar content a bit. I will make these again.

Chicken Dorito® Casserole

I made this in lieu of the usual King Ranch Casserole the other night and it was a nice change. Everyone really liked it and the Doritos gave it another dimension in flavor. Definitely a keeper!

Chocolate Meringue Cookies

Other than the fact that I over beat my egg whites and basically turned them into frothy soup, these are very good! My husband has dubbed them 'the cotton candy of cookies'. I did put in a little extra cocoa, based on the recommendation of others, and I used mini chocolate chips. In spite of the cookies being generally pretty flat, they are very tasty and quite addictive. I will try this again!

Princess Cookies

These are sooo good. I made mine bigger (I have princes, not princesses) and baked them about 9-10 minutes. Like others said, they are much better with the glaze so be sure to top them off with a generous drizzle.

Aunt Anne's Coffee Cake

I made this for breakfast this morning and it was very good. I followed the recipe, but added 1/2tsp almond extract & used 1/2c white and 1/2c brown sugar in the streusel as recommended by others. I also sprinkled the batter with walnuts before putting on the streusel. The cake is very dense & moist. I will definitely make this again.

Best Brownies

I would agree with the title of "Best Brownies"! These are very easy to make and are sooooo good. I did add a touch of cinnamon, but that was my only change. I made these for hubby's birthday & he loved them. They were nice & soft - I made sure not to over cook them & they were just gooey enough. I will make these again soon!

Easy Rum Cake

I have made this cake many times now and it's always a hit! No one ever believes it came from a mix & it's become a regular request from friends & family. I do take the cake out of the pan & pour in a bit of the rum mixture so the cake can 'marinate' in it before I skewer it & pour the rest on top. Very yummy & moist.

Amish Cinnamon Bread

I had lost my recipe and was glad to locate it again here. There are so many variations to this bread based on what flavor pudding mix you use. The trick here is... Are you ready? FREEZE your starter in small freezer bags in 1 cup portions - just remove a bag from the freezer & allow it to come to room temperature prior to use. Just be sure to perpetuate another set of starters before you use the last one!
