Cookies 'N' Cream Pie

Fantastic recipe. I don't change anything except make my own chocolate cookie crust. To do this, I use 2/3 the package of oreos (I use the other 1/3 for the crushed cookie in the filling), put them in a large zip bag, and crush them up into fine crumbs with a rolling pin. I then add about 4 tablespoons melted butter, mix up the crushed cookies in it, and press it into the pie plate. I can normally make 2 crusts using this method, and I've actually found that this recipe overall makes enough pudding filling for 2 pies if you don't need a mound over the top. I usually refrigerate one and freeze one -- comes in handy later on when you don't have time to prepare a dessert!

Yummy Sweet Potato Casserole

Made as directed the first time and it was delicious, just a little sweeter and runnier than I'd like. Second time cut back the sugar by 1/4 cup and took 1 egg out and it was perfect!

Sausage and Bean Ragout

Great recipe. Added some carrots and threw it in the slow cooker on low for 4 hours to let the flavors meld together. I also used tortellini for the pasta and it came out great!

RWOP Finalist: Oatmeal-Apple Cream Pies

Followed the recipe exactly; the cookies by themselves were delicious but I wasn't a fan of the cream cheese/apple butter filling. I thought it was too sweet and left an odd after-taste--I would not make the filling again.

Mile-High Peanut Butter-Brownie Pie

The idea of this is great, but the execution was not so great in my mind. The textures don't really mesh together too well - the pie crust, brownie, and fluffy top layer just feel weird in your mouth. The pie crust I think is completely unnecessary and doesn't add anything. Also, the topping tasted a whole lot more like cream cheese than peanut butter to me.
