Honey Mustard Dressing II

Made this using brown mustard and plain yogurt in place of mayo (happened to be what we had on hand)... definitely making this one again. Anything to get the hubs to eat salad.

Chicken Breasts with Balsamic Vinegar and Garlic

We really liked this... Skipped on breading, and just went straight to frying the chicken. Also, used chicken tenders. Would increase proportions in the future to have more sauce - we had enough for 2 check breasts, not four.

Maple Carrot Cupcakes

I feel like these needed more spice (cinnamon and nutmeg), and something to make them denser, but overall, pretty good. Skipped on the frosting since we didn't have any of the ingredients on hand, but I don't think they needed it!

Zucchini Brownies

These were alright.. A nice way to fool yourself into thinking dessert is healthy (this is not healthy!). I made it exactly to the instructions the first time, and the second time substituting butter for oil.. both times came out more cake like and crumbly than like a brownie. They were a good experiment, but I'd rather stick to my go-to brownie recipe - it may not have a healthy halo, but the taste and texture makes it a better option for us.

Easy Cajun Jambalaya

Modified this recipe, but it was great.. I added carrots and crushed tomatoes, and omitted celery since I forgot to buy it.. Hubby liked it, but wanted celery in it next time!

Spaghetti Carbonara II

We love this meal with chicken and peas added... Don't add the eggs to the pot/cook on stove.. Instead, mix the eggs, Parmesan, parsley, and then add cooked noodles to the eggs.. otherwise you risk ending up with spaghetti and scrambled eggs.

Jalapeno Popper Spread

Goes over well at parties.. We liked it better without the green peppers, with Parmesan cheese mixed in and sprinkled on top and then baked in the oven (we don't have a microwave) and served with baguette.

Hubby loooooooooooves these. I split the recipe down to 3 servings, make him one for the day of and freeze the other two. He HATES left overs, but actually think these taste better the 2nd time around.

Scaled this recipe to 5 servings.. Made 6 cupcakes. Used plain yogurt in place of sour cream. For topping, used 1 tbsp softened butter, 2 tbsp flour, 1/4 cup brown sugar, and 1 tsp cinnamon.

Chicken Marsala

Didn't have much flavor as it was cooking... Added italian dressing, a spoonful of yogurt/cornstarch slurry to thicken, and at the last minute a dash of Worcestershire sauce to enhance the flavor and it turned out great. I would definitely double the amount of sauce in order to serve with pasta.

Chicken Florentine Casserole

cut the chicken into bite sized pieces, used real bacon... next time will try w/o butter update: sauteed spinach and mushrooms first this time, used bite sized chicken pieces, followed ingredients list to the "T". Forgot about my previous thought that it didn't need butter... And after it was finished, I agree with my previous assessment.. too much butter!

Buttermilk Syrup

We made this to go along with french toast.. this made an incredibly decadent breakfast! Not sure if I'm willing to put myself through the sugar coma and weight gain that's linked to it, but it would be a nice treat to have on very rare, very special occasions.

Good Old Fashioned Pancakes

I think they're pretty good.. the hubs wishes they were a little sweeter, but I think with real maple syrup (as opposed to the corn syrup aka "log cabin" we got on sale and are trying to finish up), these would be perfect.

I didn't run into the same problem so many reviewers had with the mixture not setting firmly enough (I'm curious if those people with problems may have used margarine instead of butter, since margarine has a higher water content and could be contributing to that type of problem), but in the end, I didn't really like these at all. The level of effort involved relative to taste was completely disproportionate, and I don't intend to ever make these again.

I love this recipe as is... My fiance tried to make it once, and even though in his mind, tomato sauce is the same thing as spaghetti and he threw everything in at the same time, it was still tasty!
