Blueberry Quick Bread

This wasn't sweet enough for my families liking. I thought it was delicious but I halved the recipe because its only two of us. I substituted frozen blackberries, it was yummy but went south quick!

Slow Cooker Chicken Marrakesh

I found this recipe to be bland. I substituted turmeric for curry. I also cut the recipe in half which was plenty for two. I added a little chicken broth to the crock-pot cause it appeared dry. I served it over white rice.

Tomato Chicken Parmesan

I have made this dish twice now, both times scaling it down to 3 servings. My husband asked me to make it for a work partner of his who was joining us for dinner. Big hit! I tenderized the chicken, sautéed it about 4min each side and used mozzarella cheese to top. Thanks for the recipe.

Rosemary and Garlic Simmered Pork Chops

I used two bone in porkchops and scaled down the recipe for two. It was delicious, My husband said he wasn't hungry but ate every bite on his plate. I substituted chicken broth and saved the leftover juice to make a gravy for another dish. YUMMY!

Berdean's Cube Steak

My husband and I have been trying to perfect the art of making cube steaks this way. We were so pleased with this recipe, finally it was tender and juicy and not chewy! I took advice from past reviews and added mushrooms, diced white onion and garlic to the sauce. And I covered a casserole pan with tinfoil and baked it in the oven at 325 degrees for 2 hours.

Fresh Asparagus and Chicken Casserole

Yummy summertime casserole! I used greek plain yogurt in place of sourcream because thats what I had on hand. I only had 5 ounces of it so I guestimated the difference by adding milk and flour. The sauce was watery and I should have tweaked it more before putting it all together in the oven. I didn't have celery either so added some green bell peppers. I also added garlic, red pepper flakes, lemon pepper, cumin. My husband and I enjoyed this casserole and he had seconds which is saying something. Will definitely make again. Thanks!

Super Easy Slow Cooker Chicken

The chicken was really juicy! But the cream of flavor was bland. Using canned soup is cheating, but easier. I also used fresh mushrooms and a dash of Chianti because I had it on hand. I think it would be good over rice with a side of green veggies.

Bacon Chicken and Dumplings

It made this lastnight and I am already thinking about having it for breakfast! I followed the recipe pretty close except I used biscuits from a can. They puffed up twice the size I cut them. I also added a teaspoon of cornstarch and flour to thicken the sauce. My husband and I give it two thumbs up!

Channa Masala (Chickpea Curry)

My husband is not a fan of vegetarian so I added ground beef. I did not have cumin seeds, rice flour or garbanzo beans. I substituted cumin powder, white flour, and navy beans. It turned out a little bland but it hit the spot! I will be making it again.
