About this Cook
I enjoy having my husband say "great meal Hon" after he comes home from work. I love being a Stay at Home Mom to 2 beautiful daughters, a preschooler and toddler, and in my "me" time I scrapbook. Feeding my family healthy and balanced meals is very important. My family loves to cook and bake for all get togethers, except Sunday nights, that's always ordering pizza.

My Mom's coffeecake is a breakfast favorite and we always know summertime is here when it's time to make countless shortcakes for our local strawberries in June.
My cooking tragedies
Dumped a blueberry spice cake all over into the oven while trying to pull it out. I wasn't thinking when I only used 1 hand to pull out the new silicone cake pan I had.

Oven-Baked Caramel French Toast
I left foil covering it for the first 20 minutes of baking. Removed from oven when top was dry yet still soft. Let sit to cool 5 minutes before serving. No caramel sauce...it was sweet as is and we didn't need sauce or syrup. Excellent! Thanks for making this for us Aunt Carol!

Mascarpone Stuffed French Toast with Peaches
Five star breakfast made at home! Thanks contributer for the recipe. I have bought mascarpone before for making tiramisu and I never would have thought to use it in french toast. I used canned peaches but will make it in the summer with fresh. I used cinnamon bread from the bakery and spread the cream on the slices and even put the peaches inside the 2 slices. Thank you!

Cinnamon, Spice and Everything Nice Cookies
Made 8 kinds of Christmas cookies this December, by far these were my favorite. I could eat them all day long! Only change I made was using cinnamon instead of the ginger and nutmeg. Everyone said these were addictive! I love Hershey's Cinnamon Chips!
