My name is Erica..and for the past few years I have really been getting into baking and cooking. My absolute favorite channel is Food Network..and it makes my mouth water watching them create such fantastic dishes! My favorite food is cheese and I like to incorpate it into as much of the things I make. I especially LOVE fondue. I am a MASTER at recreating the Cheddar Fondue from The Melting Pot as well as their Gorgonzola Port Sauce. ...I look forward to someday owning my own home and having a large spacious kitchen.
My favorite things to cook
My favorite thing in the world is cheese..for the past few years I have been in LOVE with fondue. This site has PLENTY of different versions that I cannot wait to try out!
My favorite family cooking traditions
This past Thanksgiving I have been introduced to my boyfriend's family's "McWhyte Beans" first I was a little reluctant as to what these would be like..on Thanksgiving I was BLOWN AWAY... Basically a greenbean type cassarole mixed with sourcream and spices... a layer of baked cheese...and on top of that a layer of crumbled Corn Flakes tossed in melted butter.. The BEST thing I ate that day..and I was hungry for it throughout the rest of the day...I choked down the other 2 dinners thanks to those beans!
My cooking triumphs
When I finally perfected my Melting Pot CLONE Cheddar Cheese recipe as well as the Gorgonzola Port I don't need to spend the money going there when I can create the same meal in the comfort of my home! I just tried making Creme turned out very well and I was EXTREMELY happy about made me go out and buy new kitchen gadgets for myself! Basically anytime I cook something and I get complimented on a triumph..I love sharing whatever I make with other people..
My cooking tragedies
Homemade Hamburger Buns...I will be sticking to the 85 cent store bought ones from now on...not worth the hassel..and tasted very very yeasty YUCK.

Jalapeno Poppers of Champions
These were SO good. I did mix the cream cheese with an asiago/parm cheese (shredded) mixture and spread it on a piece of uncooked bacon and used the small slices of jalapeno that you can get in a jar. Wrapped them up. Stuck them with a toothpick and baked til the bacon was crisp...It was a little tricky trying to wrap them in such a way that the cream cheese didnt ooze out, which some still did..but they were DELICIOUS

Creme Brulee
Thought this was sure to have ramekins on hand..I made this in 2 regular size bowls and it wasnt AS good because of this..also when I went to melt the sugar coating..It didn't work as well by placing it back into the oven..would work much better with a mini torch! I followed the pastry chef's suggestions and did not use a double broiler...turned out DELICIOUS!
