Wheat Crackers

Love these! I made them 100% whole wheat since that's the only kind of flour I keep around, and I used EVOO instead of vegetable oil. I also grated some onion into my dough and kneaded it in - had to get it out of the fridge. They're delicious! They were a little thick because I had to flatten them out by hand, but that's ok. These are great with my homemade garlic hummus. I wish I'd doubled the batch.

Slow-Cooked Chili

This is my favorite chili recipe with one tiny change. I'm a vegetarian, so I omit the meat and double the beans - a can of kidney and a can of black works well. I like halving the recipe and cooking it in my little crockpot - I get three or four meals out of it that way. Great over pasta. The flavors are perfect.

Lentil Soup III

Easy, healthy and lovely. I made it vegetarian/vegan by using a vegetable boullion cube instead of chicken stock. I used extra garlic, shook in the cumin w/o measuring, and on impulse added a little salt, black pepper and a couple drops of liquid smoke. The flavor of the broth was warm, comforting and incredible - it'd be a great vegetarian replacement for chicken soup when you're ill. I'll make this again, ill or not, with extra onions and probably some carrots and celery in there too.

Vegetarian Chickpea Sandwich Filling

A five-star vegetarian recipe. You can dress it up in many ways, like you could tuna salad. I like adding a little mustard. This has become one of my staple meals, and I've gotten several friends hooked on the recipe as well.

Fried Rice Restaurant Style

This is wonderful. I use a soy-free "soy sauce" to make it allergy-friendly, and it still tastes great. It's also great with any veggies you like, or - my personal favorite - some fresh pineapple and a hint of pineapple juice in the sesame oil. I also usually just cook the carrots and peas right in the wok. I cook them for a minute or two, and that lets me skip the second step. This is delicious, fast, and was a big hit at a recent dinner party.

Baby Spinach Omelet

This is DELICIOUS. I used fresh chopped red onion instead of onion powder. I think it would have been good with tomato, so maybe next time. I'll make this again!

Best Spinach Dip Ever

I made this because of the rave reviews, and followed the recipe exactly (except for using low fat or fat free versions of everything.) I don't know if that's why it didn't taste good, but it just tasted more like mayo than anything else. Not great :(

Black Bean Rice Burgers

I was skeptical because I usually don't like veggie burgers, but wow! These are tasty! I added some breadcrumbs, cumin, chili powder and mixed seasonings to the mixture, and served on toasted bread with salsa, lettuce and cheddar. Also, I don't know if this is me or the recipe, but I ended up with six good-sized patties instead of four. Some of these will be frozen, I think...

Simple Roasted Chickpea Snack

I like these! Some came out crunchier than others, but the flavor is really nice. I'm a fiend for salty snacks, so I added a bit more sea salt after they came out of the oven. Omitted the cumin because I didn't have any on hand. Yum! I'd make these again. Also, it's a pain to scrub even nonstick baking sheets after making these, so I roast them on top of foil now.

It's good and filling, but needs some spices in my opinion - wasn't as flavorful as I'd hoped. Next time I'm going to add some black pepper, salt and maybe chili powder.

Tomato Chicken Parmesan

It's so tasty and easy! Especially wonderful if you make your own sauce. You don't really need two eggs, though. I had a ton left over; one would have sufficed. Also, I subbed fresh shredded Parmesan for the slices of Monterey Jack.
