Authentic Mexican Tortillas

I've made this recipe twice now -- once exactly as the directions specified, and once where I substituted 1/4 cup of the shortening for sunflower oil and didn't allow the dough to cool before rolling it out. While it tasted great both times, the consistency and ease of making the tortillas vastly improved with the veggie oil substitution. Overall, a great basic recipe. These are definitely becoming a staple in my house!

Classic Tapioca Pudding

Perfect tapioca pudding, and very easy to make. I used coconut milk instead of whole (all I had), and really couldn't tell the difference. My husband had never had tapioca pudding before, and loved this recipe. Definitely a keeper!

Roasted Almonds Sweet Potatoes

Kentucky Banana Pudding

Just what I wanted in a banana pudding: the texture was smooth, and the pudding came out nice and thick. Took this to a friend's house for a dinner date and it was gone almost instantly -- everyone LOVED it. Will definitely be making this again! From the smell as I was cooking it, I was afraid that the canned milk would leave a funny aftertaste, but I didn't notice any at serving time. I left it in the fridge overnight and most of the next day, so that might have had an effect. Alterations: I ran out of vanilla, so only added 1 tsp instead of 2 (not a problem, it turns out). For the cookies & bananas, I layered the bottom of an 8x8 baking dish with the wafers, and mixed two of the sliced bananas directly into the pudding after taking it off the heat. Then I poured in the pudding, and layered on more cookies, then a layer of bananas on top. I only used half the box of cookies for this -- I can't imaging fitting in any more!

Garlic Chicken Fried Chicken

Made this gluten free-ish by replacing the flour with 1/2 c oat flour and 1/2 c corn meal. Used crumbled up oat biscuits for the bread crumbs.

Mmm-Mmm Better Brownies

Best brownies I have ever had, hands down. I wouldn't recommend altering the recipe in any way -- I tried a version with half the sugar and the texture was really affected. Most of the gooeyness was gone, and the taste wasn't nearly as good either.

A very moist, fluffy cake. My favorite non-dairy cake option so far. I would increase the chocolate content a bit personally, but otherwise it's pretty good.

Perfect Apple Pie

Grandma's Famous Salmon Cakes

Definitely tasty -- my husband gave it the thumbs up for cooking again. I used a can of red salmon for the extra flavor punch, but otherwise prepared the recipe exactly as is. I also made sure to really press drain the salmon first, to help it hold together.

Lazygirl's Ground Turkey Stroganoff

This stuff tastes fantastic!! My only complaint is that it didn't have enough cream to offset the meat. I halved the recipe, and it still made enough for 3 meals (one person household). The leftovers are also good. Were I to make this again, I'd probably substitute milk for the water, and increase the amount of mushroom soup by half. Maybe also add in some sour cream to round it out.

Banana Sour Cream Bread

Good stuff, but I wouldn't call it "great". I followed the recipe as stated, but left out the cinnamon/sugar coating. The resulting bread has a really nice consistency -- definitely a "classic" banana bread feel -- and the loaves remained good even without refrigeration for 3 days. The taste was a little bland, however. Surprising, because the BATTER tasted really really good! I didn't have any 7x3 loaf pans, so I had to use 3 8x3.8 inch loaf pans + a mini muffin pan instead. Cooking time at 300 degrees had to be lengthened by about 45 minutes to cook the loaves all the way through (muffins were done in 30 mins). If I were to make this again, I'd probably try adding something else to the batter to give it a kick -- maybe some dried cranberries, or some rum. It was really nice bread, but it just needs something more.

Baked Omelet

A bit plain, but easy and delicious nonetheless. One batch of this omelet fed me for four nights :P, and the leftovers reheated well in the microwave. I never actually used ham for this (I only had turkey sausage on the two occasions that I cooked this) but it still came out well.

Pumpkin Pancakes

Soft Chocolate Cookies

Rich, rather than sweet. I took care to follow the recipe exactly the first time (including refrigerating the dough), and the cookies came out beautifully. Extremely soft, with a good chocolate flavor. I would, however, probably reduce the butter slightly and add more sugar the next time I make them, and possibly experiment with using mint extract rather than vanilla.

Easy Sugar Cookies

I don't normally even LIKE sugar cookies, but my family and I all loved these. I, too, made sure that the butter was completely softened before creaming, and baked each batch for exactly 8 mins each. Perfection! I get the feeling that I'll be making these again and again.

Carrot Cake III

The cake was passable, but not really as a carrot cake. The good: it was light and fluffy. The bad: too oily, and not nearly enough carrots. Perhaps this cake is usually carried by the frosting, but I didn't make any for mine and so can't say anything about it. Other than that, I followed the recipe exactly.

Turkey Pot Pie

This is a great, basic turkey pot pie. I followed the recipe exactly, but had to substitute chicken broth for the water/bouillon, and it still came out well. Hearty, warm and comforting. That said, I found the recipe somewhat bland. Kids would probably love it; it doesn't overstimulate the taste buds or have any "weird" flavors. However, I would have loved more veggies in mine, and will probably add frozen peas, broccoli and perhaps some cheese or cumin the next time I cook this.
