Good Old Fashioned Pancakes

Reviewed: Jan. 10, 2010
Perfect, just the way it is. I have prepared this recipe twice now -- once with no alterations, and once with replacing 1/2 cup flour with whole wheat -- and it was delicious both times. I didn't even have to sift the dry ingredients together; stirring vigorously with a fork before adding the wet ingredients was enough. The only thing I will mention is that these pancakes came out THICK. Not that the batter was overly thick. The pancakes just rose so much that they were about twice as thick as I'm used to, even after trying to spread the batter out. Not that I'm complaining. For all their thickness, they are still delicious and fluffy, so I'd recommend trying them at least once. Just follow the recipe the first time!

Fluffy French Toast

Reviewed: Jan. 10, 2010
Very tasty, very nice french toast -- better than my mother made when I was growing up (but don't tell her that!). I'm not sure why it's called "fluffy" french toast, as mine didn't really seam to rise or anything. But that might have just been the bread I was using. I make this recipe in 1/3 batches and can usually get 3-4 pieces of toast.

Whole Wheat Blueberry Pancakes

Reviewed: Jan. 17, 2010
Surprisingly fluffy, these were a great Sunday morning breakfast. I followed the recipe "exactly" (frozen blueberries instead of fresh, cane sugar instead of artificial sweetener), and the pancakes came out moist, fluffy and delicious. I guess I also added 3 tablespoons of crushed almonds to the batter to give it a bit of a crunch, but really, this recipe needs no alterations.

Kentucky Banana Pudding

Reviewed: Jan. 19, 2010
Just what I wanted in a banana pudding: the texture was smooth, and the pudding came out nice and thick. Took this to a friend's house for a dinner date and it was gone almost instantly -- everyone LOVED it. Will definitely be making this again! From the smell as I was cooking it, I was afraid that the canned milk would leave a funny aftertaste, but I didn't notice any at serving time. I left it in the fridge overnight and most of the next day, so that might have had an effect. Alterations: I ran out of vanilla, so only added 1 tsp instead of 2 (not a problem, it turns out). For the cookies & bananas, I layered the bottom of an 8x8 baking dish with the wafers, and mixed two of the sliced bananas directly into the pudding after taking it off the heat. Then I poured in the pudding, and layered on more cookies, then a layer of bananas on top. I only used half the box of cookies for this -- I can't imaging fitting in any more!

Tropical Tuna Melts

Reviewed: Jan. 24, 2010
Quick, easy, cheap and delicious -- four things I love to find in a recipe. I've had this as an afternoon snack, or as a quick dinner or light lunch. The taste is grand, even without the lemon-pepper which I've never had on hand.

Baked Omelet

Reviewed: Jan. 24, 2010
A bit plain, but easy and delicious nonetheless. One batch of this omelet fed me for four nights :P, and the leftovers reheated well in the microwave. I never actually used ham for this (I only had turkey sausage on the two occasions that I cooked this) but it still came out well.

The Best Rolled Sugar Cookies

Reviewed: Jan. 24, 2010
This recipe made an absolutely HUGE batch of dough. I had sugar cookies coming out my ears for two solid weeks over the holidays! Thankfully, the dough kept well, both in the fridge and in the freezer, so I never had to try cooking them all at once. The dough was extremely easy to work with, but a bit tough to roll directly out of the fridge. I'd recommend letting it warm up just a tiny bit more before trying. The resulting cookies were tasty but somewhat bland, so I intend to add lemon or orange zest to the dough next year. Overall though, this was a great recipe!

Vanilla - Chocolate Powdered Sugar Frosting

Reviewed: Jan. 24, 2010
It takes absolutely forever to cream the butter and sugar together by hand, but it is well worth the time and effort. This is fantastic sugar cookie frosting! I'm definitely hanging onto this recipe for next year's holiday baking.

Turkey Pot Pie

Reviewed: Jan. 24, 2010
This is a great, basic turkey pot pie. I followed the recipe exactly, but had to substitute chicken broth for the water/bouillon, and it still came out well. Hearty, warm and comforting. That said, I found the recipe somewhat bland. Kids would probably love it; it doesn't overstimulate the taste buds or have any "weird" flavors. However, I would have loved more veggies in mine, and will probably add frozen peas, broccoli and perhaps some cheese or cumin the next time I cook this.

Banana Sour Cream Bread

Reviewed: Feb. 7, 2010
Good stuff, but I wouldn't call it "great". I followed the recipe as stated, but left out the cinnamon/sugar coating. The resulting bread has a really nice consistency -- definitely a "classic" banana bread feel -- and the loaves remained good even without refrigeration for 3 days. The taste was a little bland, however. Surprising, because the BATTER tasted really really good! I didn't have any 7x3 loaf pans, so I had to use 3 8x3.8 inch loaf pans + a mini muffin pan instead. Cooking time at 300 degrees had to be lengthened by about 45 minutes to cook the loaves all the way through (muffins were done in 30 mins). If I were to make this again, I'd probably try adding something else to the batter to give it a kick -- maybe some dried cranberries, or some rum. It was really nice bread, but it just needs something more.

Lazygirl's Ground Turkey Stroganoff

Reviewed: Feb. 7, 2010
This stuff tastes fantastic!! My only complaint is that it didn't have enough cream to offset the meat. I halved the recipe, and it still made enough for 3 meals (one person household). The leftovers are also good. Were I to make this again, I'd probably substitute milk for the water, and increase the amount of mushroom soup by half. Maybe also add in some sour cream to round it out.

Turkey Wild Rice Soup II

Reviewed: Nov. 5, 2010
I substituted 1/2 cup sour cream for the full cream and had no almonds to add, but followed the rest of the recipe as-is. Wonderful soup; I'll definitely be making this again.

Carrot Cake III

Reviewed: Dec. 26, 2010
The cake was passable, but not really as a carrot cake. The good: it was light and fluffy. The bad: too oily, and not nearly enough carrots. Perhaps this cake is usually carried by the frosting, but I didn't make any for mine and so can't say anything about it. Other than that, I followed the recipe exactly.

Easy Sugar Cookies

Reviewed: Jun. 18, 2011
I don't normally even LIKE sugar cookies, but my family and I all loved these. I, too, made sure that the butter was completely softened before creaming, and baked each batch for exactly 8 mins each. Perfection! I get the feeling that I'll be making these again and again.

Grandma's Famous Salmon Cakes

Reviewed: Jul. 20, 2011
Definitely tasty -- my husband gave it the thumbs up for cooking again. I used a can of red salmon for the extra flavor punch, but otherwise prepared the recipe exactly as is. I also made sure to really press drain the salmon first, to help it hold together.

Soft Chocolate Cookies

Reviewed: Nov. 1, 2011
Rich, rather than sweet. I took care to follow the recipe exactly the first time (including refrigerating the dough), and the cookies came out beautifully. Extremely soft, with a good chocolate flavor. I would, however, probably reduce the butter slightly and add more sugar the next time I make them, and possibly experiment with using mint extract rather than vanilla.

Phenomenal. The crust was so light, even after I added a tiny bit more water to help hold it together. Definitely a keeper!
