Tomato Aspic

Reviewed: Apr. 8, 2014
Perfect SOuthern Recipe....I mean, I don't really boil the V8 juice but it works. If you use individual molds put a small amount of the celery and onions in the individual mold before the juice mixture. I also add a little salt and pepper and my mom likes it with olives sliced but I don't like olives so I leave them out. Great with a dallop of homemade mayonnaise.

World's Best Lasagna

Reviewed: Sep. 11, 2013
This recipe sounds so simple but all the flavors just "Work" together. I have used it many times over the years and people always rave about it! Great job JC from your former babysitters :)

Cheese Crispies

Reviewed: Oct. 22, 2012
This recipe turned out great for me. Not hardly any grease at all. I mean the pan had some grease but the cookies themselves were not greasy. These were just what I had hoped for. I grated the cheese and the butter in the food processor then added the flour, cayenne and some coarse salt. No pepper or garlic or worstershire. Blended it well in food processor...or as well as it would. Then kneeded a bit by hand before adding the rice crispy's. I didn't measure...just added until it looked right but about 2 cups. Perfect! and Crisp! I will save this recipe~!

Whit's Chicken Enchiladas

Reviewed: May 19, 2009
These are by far the best enchiladas ANYWHERE! I alwasy give people this recipe. It does need some type of sauce if you ask me and I don't pour the cream over the pan but I do use a red enchilada sauce and I use corn instead of the flour tortillas.

Coco-Cola Cake II

Reviewed: May 19, 2009
This was an odd recipe....especially the marshmellows which did not melt and made a puddle of goo on top. Why doesn't it just say to add them with the boiling coke and butter mixture. I just scraped them off when I took it out of the oven. After the other comments I thought I would try what one reviewer said and cook it a bit longer and it seemed to work. No issues getting it out of the pan and everyone loved it. I did add another 2 TB butter softened and another 2 TB of cocoa and about another cup of powdered sugar for the icing. Everyone loved it. Very rich and sweet. I am not sure I would make it again unless like this time the person I make it for loved Coke and chocolate.

Southern Boiled Custard

Reviewed: Jan. 23, 2005
Cooking the mixture too high or too long or not "tempering" properly will cause it to taste like scrambled eggs. This is not a drink...it is used as an additon to a dessert or as my great aunt used to do top Jell-O. This recipe is exactly as I remember hers. Be patient with it. "Coating" the spoon means the wooden spoon looks like it has a coat on. Another words it sticks to the back of the spoon. She calls it a winter beverage (eggnog) but boiled custard is usually used as stated above. It is DELICIOUS!

Blueberry Pound Cake

Reviewed: Aug. 25, 2001
This recipe is FABULOUS! I made it for my staff at work and I used blueberries I had picked myself at a blueberry farm. I also mixed a little powdered sugar with a dash of vanilla and a tablespoon of milk and drizzled on top of the cooled cake. It was heavenly and not a crumb was left.
