Whit's Chicken Enchiladas

These are by far the best enchiladas ANYWHERE! I alwasy give people this recipe. It does need some type of sauce if you ask me and I don't pour the cream over the pan but I do use a red enchilada sauce and I use corn instead of the flour tortillas.

Coco-Cola Cake II

This was an odd recipe....especially the marshmellows which did not melt and made a puddle of goo on top. Why doesn't it just say to add them with the boiling coke and butter mixture. I just scraped them off when I took it out of the oven. After the other comments I thought I would try what one reviewer said and cook it a bit longer and it seemed to work. No issues getting it out of the pan and everyone loved it. I did add another 2 TB butter softened and another 2 TB of cocoa and about another cup of powdered sugar for the icing. Everyone loved it. Very rich and sweet. I am not sure I would make it again unless like this time the person I make it for loved Coke and chocolate.

Southern Boiled Custard

Cooking the mixture too high or too long or not "tempering" properly will cause it to taste like scrambled eggs. This is not a drink...it is used as an additon to a dessert or as my great aunt used to do top Jell-O. This recipe is exactly as I remember hers. Be patient with it. "Coating" the spoon means the wooden spoon looks like it has a coat on. Another words it sticks to the back of the spoon. She calls it a winter beverage (eggnog) but boiled custard is usually used as stated above. It is DELICIOUS!

Blueberry Pound Cake

This recipe is FABULOUS! I made it for my staff at work and I used blueberries I had picked myself at a blueberry farm. I also mixed a little powdered sugar with a dash of vanilla and a tablespoon of milk and drizzled on top of the cooled cake. It was heavenly and not a crumb was left.
