Iced Pumpkin Cookies

These cookies were very good. I love everything pumpkin so this was right up my alley. I guess the only thing I was not thrilled about was the cakey texture; I wish they were just a little more cookie-like. Out of the oven they were quite good but around a day or two later they just weren't as good as leftover cookies. Maybe next time I will add a little less flour.

Blackened Salmon Fillets

I love spicy food and in this case this recipe really gave the salmon the extra kick it needed. I struggle with salmon being too fishy sometimes but it is so good for you that I keep trying to find ways to incorporate it into dinner. This was perfect! I used leftovers in a salad - yum!

Chocolate Cookie Cheesecake

Just wonderful. Takes some time but so worth it. This was the first cheesecake I ever attempted and I was so pleased with the way it turned out. It was seriously the best dessert I have ever made.

Layered Peppermint Bark

Blackened Tuna Steaks with Mango Salsa

This is my go-to "look like a professional chef" recipe! Not only is it probably one of the most delicious things I've ever eaten, but the presentation is so beautiful. I make the "blackened" part pretty spicy, but it's easy to tone down - especially when I'm scarfing it down while my husband is sweating and sniffing from the heat! ;) One of the best recipes I've found on this site!!!

Zucchini Pancakes

Tasty! I did tweak a few things here and there to make them even more scrumptious. I doubled the whole recipe and it made roughly 10 pancakes. Used Trader Joe's "White" Whole Wheat Flour instead of reg. I added ~2 tbsp sugar to sweeten it up a little bit - my hubby claimed my last attempt at zucchini pancakes weren't as sweet as he remembered when he had them growing up - so I thought I'd sweeten them a little. I only did about a tsp of mayonnaise - I was kind of grossed out about 2 tbsp of mayo in the pancakes ;) I also used chopped green onions instead of reg onions. Lastly I topped it with chicken pieces (sauteed in garlic and butter) and extra parmesan cheese. Delicious! Hubby ate them all!

Squash-Apple Bake

LOVED this. I used pippin apples and a pinch of pumpkin pie spice over top. It is a good holiday side dish - but is sweet enough to have as a dessert. Next time I will try to incorporate oats to make some kind of apple squash crisp... So yummy!
